4 Ingredient Chocolate Melting Moments

These chocolate cookies will melt in your mouth as you eat them. They are an easy cookie to make and only need four ingredients. The cookies can be made ahead of time and store well so they are an easy dessert to serve at a gathering or to gift to others.

I wanted to share one last easy dessert recipe to end the year. My family and friends have really enjoyed the Melting Moments cookies I’ve been making so I wanted to create one more flavor. I made this chocolate version for my sister who only eats desserts if they are chocolate flavored.

Ingredients

  • Cake Flour
  • Butter
  • Cocoa Powder
  • Powdered Sugar

Cake Flour: These cookies use cake flour which has a lower protein than all purpose flour, creating a much more tender crumb. Using cake flour helps give the cookies their melt-in-your-mouth texture. If you don’t have cake flour, you can also make a homemade cake flour using all purpose flour and cornstarch.

Butter: Make sure to use unsalted butter. Butter gives the cookies a tender rich crumb.

Unsweetened Cocoa Powder: Unsweetened cocoa powder is used to give the cookies their chocolate flavor. I prefer using dutch processed cocoa powder because it has a richer chocolate flavor and is less acidic but I believe the cookies should still work with natural cocoa powder. If you don’t want to make them chocolate flavored, you can also make plain ones.

Powdered Sugar: The cookies are sweetened with powdered sugar. Powdered sugar is also what gives the cookies their melt-in-your-mouth sensation. Powdered sugar in the US is generally made with sugar and cornstarch. Make sure the powdered sugar you are using contains cornstarch in the ingredient list.

Melting Moments Cookies

Melting Moments is an Australian type of butter cookie. The cookies are sometimes served as is with a dusting of powdered sugar and sometimes used to make sandwich cookies with a cream filling in the center. I prefer to serve the cookies as individual cookies rather than sandwich cookies.

How to Make Chocolate Melting Moments

The butter and sugar are first creamed together until light and fluffy. The cocoa powder and cake flour are then mixed in until a dough forms. The dough is scooped out and then rolled into balls. The dough balls are placed into the fridge for 15 minutes while your oven preheats. The cookies are then ready to be baked.

Ingredients

  • 1/2 cup (113 g) unsalted butter brought to room temperature
  • 1/2 cup (61 g) powdered sugar plus additional for dusting
  • 1 cup (114 g) cake flour
  • 1 1/2 tbsp (10 g) unsweetened dutch process cocoa powder

Instructions

  • Line a large baking sheet with a silicone baking mat or parchment paper.
  • In a large mixing bowl, add butter and sugar. Using the flat paddle attachment on the mixer, cream at highest speed until light and fluffy (this should only take about 30 seconds to 1 minute). Make sure to stop and scrape the sides of your bowl a few times in between mixing to make sure all the sugar and butter gets mixed.
  • Add in cake flour and cocoa powder. Mix on low speed until the flour and cocoa powder are fully and evenly incorporated and a dough forms. The dough should also be uniform in color.
  • Use a 2 tsp cookie scoop to scoop out dough. If you don't own a 2 tsp cookie scoop you can just measure out 2 tsp of dough with your measuring spoon. Roll each dough ball in between your palms until it becomes a smooth round ball. Place onto prepared cookie sheet, spacing cookies at least one inch apart. 
  • Preheat oven to 325°F (163°C). While your oven is preheating, place the cookie dough balls into the fridge for 15 minutes.
  • Bake cookies for about 10 minutes or until the cookies are done. The cookies may start to turn a darker brown around the edges. Let the cookies cool on the cookie sheet. Once cooled, remove cookies and dust with powdered sugar before serving.

Notes

  • Most powdered sugar sold in the US contains cornstarch and that is what I used to make these cookies. Make sure your powdered sugar is the type that contains cornstarch in the ingredient list.
  • When measuring flour or sugar, use the spoon and level method. This means you should spoon the flour/sugar into the measuring cup and then level off the surface with a knife. Don't directly dip the measuring cup into the flour/sugar.
  • Homemade cake flour: Measure 1 cup of all purpose flour. Remove 2 tablespoons of the flour (you can add this back to your flour container). Add the remaining into a medium bowl. Add 2 tablespoons of cornstarch to the bowl. Thoroughly whisk the flour and cornstarch together.
  • I don't recommend omitting the powdered sugar on top. The cookies are not that sweet so the additional powdered sugar helps add some sweetness and also helps create the melting sensation.
