Guiness jello with Baileys Irish cream is a fun and easy St. Patrick’s Day dessert. The bitter stout beer is perfect with the creamy sweet Baileys and makes for a fun presentation, too.
I have one more St. Patrick’s Day dessert idea to share with you. These are individual servings of Guinness stout beer flavored gelatin, which is served in mini beer taster glasses and topped with Baileys Irish cream liquor, making them look just like a freshly poured glass of beer.
I have to confess, I’m not actually a fan of drinking Guinness beer. It’s just too bitter for me. But every year around this time, I can’t resist making at least one Guinness flavored recipe. I love adding it to chocolate cakes, brownies, and now this gelatin dessert. I actually came up with the idea last year, when I made my coffee jelly. I was able to make those look like shots of espresso and I knew then that I could do something similar with beer. Sometimes I forget about these ideas, but luckily this time I remembered.
These small servings are so fun to eat. Mr. K and I were enjoying them after dinner, though apparently my husband had a few too many because soon he was acting very silly and giggly…
This is a stress-free, easy dessert which can be made ahead of time. You can make a big batch and serve them at a party. For those wondering, I poured mine into 5 oz beer taster glasses*. I have been wanting to get them for awhile, and this was the perfect excuse!

Guinness Stout Beer Jello with Irish Cream
Ingredients
- 1 (.25-oz) package unflavored gelatin
- 2 tbsp hot water
- 1/4 - 1/2 cup cup white granulated sugar
- 1 (11-oz) bottle Guinness stout beer
- Baileys Irish Cream liquor
Instructions
- In a small bowl, add gelatin and hot water and mix with a small whisk until all of the gelatin powder is dissolved. The mixture should be thick, clear, and smooth.
- In a medium pot over medium heat, scrape in gelatin, beer, sugar and bring to a boil, stirring until gelatin is fully dissolved (this should only take 15-30 seconds). You should taste and see if you need to add more sugar. I did 1/4 cup but if you want to lessen the bitter flavor even more, you can add some more sugar.
- While gelatin is hot, pour into individual mini glasses with the help of a funnel, filling them up about halfway. I used 5 oz beer taster glasses. Place glasses into the fridge to set, about 2 hours. Keep jello in fridge until ready to serve. Right before serving, pour a small layer of cold Irish cream liquor on top, to resemble the beer foam. The cream also acts as a syrup topping for the gelatin. Serve cold.

I had similar glasses when I went to Alesmith and I looked them up on Amazon after and bought some! now I’m trying to justify the purchase by using them whenever I get the chance. haha!
