This easy palmier recipe has just two ingredients: store-bought puff pastry and sugar. They are buttery, sweet, and so flaky from the layers of pastry. They are a great dessert to make if you want something fancy but don’t have a lot of time.
After making my Nutella palmiers, I wanted to make traditional palmiers. Then I saw a recipe from Art of Dessert where the palmiers had a different shape. Rather than the traditional swirls on each side, the palmiers were shaped a bit like maple leaves. I really liked how they looked and decided to try out the recipe.
If you’ve seen my other recipes you already know how much I love store-bought puff pastry. I would love to learn how to make it from scratch, but I know it takes a lot of time. The packaged kind is so convenient.
It makes this recipe so simple – just two ingredients. It doesn’t get any easier than that.
Easy Palmiers
You will need to thaw the pastry before you use it. It’s best to thaw it in the refrigerator because the dough needs to be cold when you work with it. If the butter in the pastry gets too warm your palmiers won’t bake up as flaky.
Unroll one sheet of thawed pastry and sprinkle granulated sugar over the top. To create a maple-leaf shape follow these folding steps:
- Bring the left side and right side to meet in the middle then sprinkle again with sugar.
- Fold it in half horizontally, so the top and bottom meet then sprinkle again with sugar.
- Finally, fold it in half vertically like a book, so that the left side meets the right side. You should have four layers of puff pastry on one side of the pastry roll.
- Repeat the process with the second sheet of puff pastry.
Once you’ve rolled it up slice the log into ¼” thick cookies. Transfer onto a baking sheet and space them 2 inches apart.
Bake the cookies at 425°F for about 10 minutes or until they are puffed and golden around the edges. Cool them on the baking sheet before serving.
They will keep for a few days in an airtight container at room temperature.
