3 Ingredient Healthy Oat Cookies (No White Flour, Butter, Refined Sugar or Eggs)

These peanut butter oat cookies are just 3 ingredients and the dough takes only five minutes to make. The cookies don’t contain any white flour, butter, eggs or refined sugar. The cookies taste like biscuit cookies and make a great snack.

I am always trying to create new oat cookie variations. Most of the ones I’ve created are soft and chewy, so I wanted something a little crunchier this time around. These cookies are not too sweet, similar to firm biscuit cookies, though they aren’t quite as hard. I especially love that these cookies are ready from start to finish in less than 20 minutes.

Ingredients

  • Peanut Butter
  • Oat Flour
  • Maple Syrup

Peanut Butter

This recipe uses natural creamy peanut butter. You can also substitute with other nut butters like almond butter or cashew butter. For a nut-free version, you can try sunflower seed butter. I have only tested this with natural peanut butter (just peanuts and salt in the ingredients) so I don’t know if it will work with regular peanut butter processed with oils.

Oat Flour

Oat flour is what firms up these cookies and makes them taste like biscuit cookies. Oat flour is usually available at the grocery store in the baking aisle. If you have a food processor or high powered blender, you can also make your own oat flour by grinding down oats until the consistency resembles flour. I do not have a substitute for oat flour for this recipe.

Maple Syrup

The maple syrup adds a little sweetness to the cookies and also helps to firm up the dough. I have not tested this recipe with other sweeteners. I only added a little maple syrup to these cookies because I prefer biscuit cookies that have only a hint of sweetness. You can add a little more syrup if you prefer sweeter cookies.

Cookie Texture

These cookies have a firm texture, similar to biscuit cookies. However because of the minimal ingredients and lack of eggs, they are a little more delicate. They do break apart more easily and are not as hard or firm as regular biscuit cookies.

Ingredients

  • 1/2 cup natural creamy peanut butter unsweetened
  • 1/4 cup + 2 tbsp oat flour
  • 3 tbsp maple syrup or more as needed

Instructions

  • Preheat oven to 350°F. Line a large baking sheet with parchment paper.
  • In a medium bowl, combine all ingredients. Mix with a spatula until ingredients are evenly incorporated and a cookie dough forms. If you prefer sweeter cookies you can add 1 more tbsp of syrup.
  • Using a 1.5 tbsp cookie scoop, scoop cookie dough balls and place onto prepared baking sheet, spaced 2 inches apart.
  • Use the palm of your hand to flatten dough balls into thick, round disks. If desired, use a fork to make criss cross pattern across surface of each cookie.
  • Bake cookies about 11-13 minutes or until they are puffed up, with small cracks on the surface. The surface of the cookies should also look dry. Cookies may initially feel slightly soft but should firm up as they cool. Let cookies cool completely on the baking sheet before removing them.

Notes

  • Ingredients are measured using US cups and tbsp.

  • I like my biscuit cookies with just a hint of sweetness. If you prefer sweeter cookies you can add more syrup. Be careful to not add too much syrup because it will change the texture of the cookies.

  1. These were so easy to make and turned out great! Deliciously chewy with a crunchy edge!

    I live in Australia but didn’t convert the recipe and it worked out perfectly (I used the same amount in cups / tbsp). I substituted the maple syrup with brown rice malt syrup and used 4 tbsp as it’s not as sweet as maple syrup, so delicious!

    Thank you for the recipe, can’t wait to try the other ones!

  5. The cookies are yumm – sprinkled salt granules which enhanced the taste but they are a bit soft n break easily.

  6. Is there a substitute for Maple syrup… We don’t get it very easily here.

  8. Hi I just made it with double the amount and it only made 9 cookies and I used one and half tbsp measurements as you have suggested therefore not sure why only made 9? 
    I slightly over cooked them but they still have very good texture and I’ll perfect it next time ??

    • I’m a little confused by your concern that you only got 9 cookies. The recipe states it makes 8 cookies so you actually got an extra cookie out of it

      • Sorry for the confusion but it was double the batch and that’s why! And I should get 16 in total. Anyway they are super yummy regardless.

  13. Haven’t made these yet but am wondering about the maple syrup. Are you using pure maple syrup or something along the lines of Log Cabin Syrup, Mrs. Butterworth etc?

  15. These were great! I’m always looking for school snacks and these were perfect. Healthy and delicious! And my 4 yo helped make them. No eggs and no flour meant safe to handle raw dough. I made the oat flour and made a sunflower seed-pumpkin seed-flax butter so it was school safe (no nuts or peanuts). We also added chocolate, butterscotch, and “unicorn” chips, so a little less healthy, but they feel like kid treats. Thank you so much for this recipe!
