2 Ingredient No Bake Berry Cloud Cake (No Flour, Eggs, Sugar, Butter or Oil)

This unique no bake dessert looks like a cake but feels like you are eating a cloud. It is very fluffy and melts in your mouth. This dessert is just 2 ingredients and doesn’t require any flour, eggs, added sugar, butter or oil.

This is such a fun dessert to eat. It looks like a cake but it’s not quite a cake. It is also a very low calorie dessert. I think it’s perfect for when you are craving dessert but still want to eat healthy as well.

I previously made an Apple Cloud Cake which was really fun, but this version has even more flavor. The original apple cloud cake is fun to make and eat, but the taste is a bit plain. I’ve been trying to come up with new flavors and this version has been my favorite. The berries add a tartness to the cake that makes it more flavorful.

Ingredients

  • Unsweetened Mixed Berry Applesauce
  • Unflavored gelatin powder

Gelatin Powder: This recipe is made with unflavored gelatin powder. It will not work with flavored gelatin (like Jello). It also will not work with agar powder.

Unsweetened Mixed Berry Applesauce: Any flavored applesauce will work but you must use unsweetened applesauce. Sweetened applesauce will not work. It makes the batter too heavy and too wet. If you can’t find any flavored unsweetened applesauce, you can use regular plain unsweetened applesauce.

Substitutions

When I first shared my apple cloud cake, I thought there would be so many other versions I could make with other fruit. Unfortunately, it turns out this cake only works with a limited set of ingredients. Many fruits don’t work because of their high sugar content (bananas, etc). Fruits with too much water content also don’t work.

The best results I’ve had have been with pure unsweetened applesauce or unsweetened applesauce mixed with other flavors. So flavors like unsweetened blueberry applesauce, unsweetened strawberry applesauce and unsweetened mixed berry applesauce.

How to Make No Bake Cloud Cake

The gelatin is dissolved in the berry applesauce. It is then whipped for about 15 minutes or until triple the volume and soft peaks form. As it is mixing, the mixture should look like whipped cream. It will immediately deflate once you stop the mixer but if you dip your beater into the mixture, it should be able to hold a soft peak.

Cloud Cake Texture

When you cut into this cake, it looks like a cake. But when you bite into it, it immediately melts in your mouth. The texture is almost like a very airy marshmallow.

As it melts in your mouth, you will taste the flavored applesauce. You don’t taste the gelatin. It is tart and slightly sweet.

Ingredients

  • 1 2/3 cups (408 g) unsweetened mixed berry applesauce
  • 4 1/2 tsp (15 g) unflavored gelatin powder

Instructions

  • Line an 8 inch square pan with parchment paper.
  • Add applesauce and gelatin to a large heat-proof mixing bowl. Whisk until gelatin is fully incorporated. The gelatin powder should make your applesauce thick and a little chunky.
  • Using the double boiler method on the stove, dissolve the gelatin completely. When the gelatin is dissolved, your mixture should become thinner and smoother. The applesauce should feel warm to the touch, but not hot. Be careful to not let the mixture get hot or boil. Remove bowl from stove and let it sit for about 5 minutes to cool to room temperature.
  • Pour applesauce mixture into the bowl of a stand mixer. Using the wire whisk attachment, beat on highest speed for about 15 minutes. Your mixture should more than triple in volume and should look like airy whipped cream. When you stop your mixer, your wire whisk should be able to hold a soft peak. See photo in post for reference.
  • Pour applesauce mixture into your prepared pan. Use a spatula to spread it evenly across and smooth the surface. Place into fridge for at least 1 hour to set.
  • Keep the cake in the fridge until ready to serve. Before serving, you can first decorate the cake with whipped cream or other frosting. Slice cake with a very large and sharp knife. The cake is best served chilled. Store any uneaten cake in the fridge.

Notes

  • This recipe must be made with unsweetened applesauce. Sweetened applesauce will not work because the added sugar makes the cake batter too dense and moist. See post for more details of other potential flavors.
  • This berry cloud cake is tart from the berry applesauce. It doesn’t really have much sweetness to it. If you are on a low sugar diet, I don’t think you will mind. The cake is flavorful even though it’s not sweet.
  • If you want to add sweetness, it has to be in the form of the frosting. I made a whipped cream frosting lightly sweetened with sugar. The whipped cream can also be sweetened with stevia or other sugar substitutes. 
  • I recommend using a stand mixer if you have one to mix this. You do need to whip the batter for about 15 minutes on highest speed and it’s just easier to do with a stand mixer. There is also less splatter because a stand mixer bowl is generally deeper.
  • The double boiler method is a stovetop method used to heat up your applesauce mixture using indirect heat. Use a saucepan that is smaller than your mixing bowl and add about 1 inch of water and bring to a simmer. You want to choose a saucepan where you will be able to place the bowl on top that fits snugly and won't touch the water in the saucepan. Once the water has reached a simmer, place your mixing bowl on top. Stir applesauce mixture with whisk to dissolve the gelatin as the mixture begins to heat up. Be careful to not let the mixture boil or get too hot.
  • For the whipped cream frosting, add 1 cup of cold heavy cream and 3 tbsp of sugar to a large mixing bowl and beat on highest speed until stiff peaks form.  You can add more or less sugar to taste. You can substitute the sugar with stevia or other sugar substitutes. You can also use Cool Whip instead. 
  • I used Mott's no sugar added Mixed Berry Applesauce
  • I used Knox unflavored gelatin powder.*

  1. Where do you get mix berry applesauce.

    • We have found it at regular grocery stores and places like Walmart if you are in the US. You can also order it on Amazon. If you can’t find it any kind of flavored unsweetened applesauce will work – like blueberry, strawberry, etc.

  4. Very light and fluffy. Melts in your mouth. I didn’t add whipped cream due to the fat and sugar, but I know that would have made it even better. I used strawberry applesauce and sliced fresh strawberries on top for serving.

I made this today with homemade whipped cream I used monk fruit to make the whipped cream I used 3 packs of the knox unflavored gelatin and 5 1/2 of the unsweetened berry applesauce cause I had to use a 13 inch pan it came out good I had a nice size piece was tempted to get a second but didn’t

  9. Wonderful! My husband spotted this recipe and asked me to try it. We top it when serving with a little bit of whipped cream and some fresh berries. Perfect summertime dessert and not laden with fat, refined sugar or calories. He is very picky about food but loves this dessert. The stores are out of mixed berry applesauce now – probably from a zillion people finding this recipe and giving it a try. I had to get strawberry kiwi for the 2nd batch – it is equally delicious.

  11. Being the only diabetic in my family, it’s difficult to find a dessert that all of us will enjoy. It was a hit! I used unsweetened blueberry applesauce and made up whipping cream with stevia.   13. Excellent directions! I never knew that Mott’s made a flavoured unsweetened applesauce and was pleasantly surprised at how good it was in this recipe. I followed the recipe exactly with the exception of using my handheld mixer with the wire whisk attachment. It had tripled in volume by the 15 minute mark so it made no difference time wise and the result was just like the picture. This recipe is a keeper?.

  15. hi I really want to make this recipe but I was only able to find plain unsweetened apple sauce- no berry or any other flavors to be had, and since this is a low flavor recipe that is also finicky I want to know what you think I could use to put flavor in the applesauce.

    • I would recommend just trying it with the plain unsweetened applesauce first. If you feel like it needs more flavor, next time you can play around with adding in some blended berries or making a thick berry puree and mixing it with the applesauce. You just need to be careful because if it becomes too liquidy, it won’t set

    • It will not work with berry flavored jello. I would recommend just trying it with plain unsweetened applesauce. I shared the plain applesauce version last year and loved it. Now that I have made the berry flavor, I do like it a little more, but the original was good too!

  24. Wow! I will definitely be making this again. When I stumbled on this recipe I was intrigued by the fact only 2 ingredients are necessary and it’s a very low calorie dessert! Perfect when you want something a little sweet with little sugar. (I did add store-bought whipped cream for the frosting…although next time I would like to make my own whip cream!) My husband and I both loved it! It really was quite simple and I am all about simple desserts! This really is a perfect Summer dessert!

    an item of soft, sweet food made from a mixture of flour, shortening, eggs, sugar, and other ingredients, baked and often decorated.

    • There are many desserts with cake in their name that don’t fit that common cake description. Cheesecake and flourless chocolate cake just to name a few.

    • For this recipe, we use flavored unsweetened applesauce (not unflavored) and say in the post “As it melts in your mouth, you will taste the flavored applesauce. You don’t taste the gelatin. It is tart and slightly sweet.”

  38. Rather a bland concoction, it is no kind of cake except in presentation. It tastes ok but in no way satisfying or filling. Because of the Knox gelatin it is also not suitable for vegans or vegetarians. Who is targeted for this recipe?

    Can a sprinkle of Stevia be used in the applesauce?

    • It will not work with sugar-free jello because sugar-free jello is not pure gelatin powder. It has other flavorings and sugar substitutes added to it.

  52. Haven’t cooked them but would like to pass receipts on to my grandson as he has allergies to milk, eggs and many other things. Your receipts sound like he will be able to eat. He is only 8 years old and could trie something different.

  53. My partner has type 1 diabetes and a sweet tooth, and this was the perfect solution. Relatively quick and easy (although messy!) to make, and I topped with sugar free whipped cream. It was perfect – spongy, tart with a balance of sweetness from the whipped topping. And very low carb! Will definitely be making again!

  66. This looks delicious. I was thinking of making it for a picnic. Does it need to be eaten right away, or could it be stored in the fridge overnight? Would it survive a half hour or more unrefrigerated?

    • You can store it in the refrigerator. The cake is very delicate and won’t hold up well for long at room temperature – even less if it’s outside.

    • the sugar in the mixed berry applesauce is the natural sugars from the apples and berries. It states that it has “no sugar added”

  84. Could you u maybe mix a little bit of flavored gelatin with the unflavored gelatin? Or maybe replace like ¼ of the recommended amount of gelatin with flavored gelatin to make it a little more flavorful/sweeter?

    • Sorry I don’t know without trying it. The recipe is pretty sensitive to the amount of sugar that can be added though, so that might be a problem with adding flavored gelatin.

    I’m looking for an equivalent substitute for Mixed berry applesauce; what’s it made from?

    It sounds like somewhat of an oxymoron; applesauce is made from apples, mixed berries are not generally considered apples ?

    Are we just talking about an unsweetened mixed berry purée?
    Essentially what you’d get by blending then sieving fresh berries? Or is the purée also reduced down?

    • In the US you can buy flavored applesauce – you can use plain unsweetened applesauce, too, if flavored isn’t available.

    You mention applesauce, which in my country, UK & Australia, is just that, apples as a sauce or puree. Mixed berries are very different and certainly don’t contain apples. So it would be good if you could clarify this please.

    • In the US, you can buy flavored applesauce made with applesauce and other ingredients like berries. You can also make this cake with plain applesauce.
