2 Ingredient Apple Cookies (No Wheat Flour, Eggs, Butter or Oil)

An easy apple cookie that is just 2 ingredients. These cookies don’t require any wheat flour, eggs, butter or oil. They take only about five minutes to prepare. They make a great quick snack or dessert.

This recipe is a quick and simple cookie for when you want to make something homemade but you’re low on energy or time. I’ve been super busy and exhausted lately but I’m still trying to have some homemade snacks in the house, like these cookies. I love that you can eat them plain or use them as a base for a more complex cookie.

Ingredients

  • Applesauce
  • Almond Flour

Applesauce: You can use homemade or store-bought applesauce. I recommend you use sweetened applesauce, otherwise the cookies won’t be sweet.  If you only have unsweetened applesauce, you can sprinkle some sugar over the tops of the cookies so they will have some sweetness.

Almond Flour: The cookies are held together with superfine almond flour. If you are looking for an almond flour substitute, try my 2 ingredient apple oatmeal cookies.

Variations

This recipe makes a very basic snack cookie. I love making these for anyone looking for a healthy snack. If you want to add more flavors and textures, you definitely can. Here are some ideas:

  • Add dried fruit or chocolate chips for more flavors and textures
  • Stir in cinnamon or other fall spices into the dough
  • Sprinkle the tops of the cookies with sugar or cinnamon sugar

How to Make Apple Cookies

Mix the almond flour and applesauce until evenly combined. Scoop up dough with a cookie scoop and then flatten the dough balls into disks on a cookie sheet. The cookies are then ready to go in the oven. It’s that easy!

Ingredients

  • 4 oz (113 g) applesauce
  • 1 cup (96 g) superfine almond flour

Instructions

  • Preheat oven to 350°F (177°C). Line a large baking sheet with silicone baking mat or parchment paper.
  • In a large bowl, add applesauce and almond flour. Stir until almond flour is completely incorporated and evenly mixed in.
  • Using a 1 tbsp cookie scoop, scoop cookie dough balls and place onto prepared cookie sheet, spacing cookies 2 inches apart.
  • Flatten each dough ball with the palm of your hand until it forms a thick round disk. Smooth the edges with your fingers as needed.
  • Bake cookies about 15-18 minutes or until edges turn a medium brown. Let cookies cool fully on cookie sheet before removing.

Notes

  • This is a very basic low sugar snack cookie. It has some sweetness but is not very sweet. You can enjoy them as they are but you can also dress the cookies up for more flavors and textures. See post for more variation ideas.
  • I used sweetened applesauce. You can use unsweetened, but your cookies will have almost no sweetness. Even using sweetened applesauce, the cookies are only lightly sweetened.
  • Applesauce is usually sold in 4 oz snack cup containers. If using store-bought applesauce, you just need one 4 oz container. 4 oz refers to weight, not volume.
  • I used Mott's sweetened applesauce* and Kirkland's blanched superfine almond flour.*
  • I used OXO 1 tbsp cookie scoop.*
  • I used Miu cookie silicone mat.* I especially like using this mat because it has circles drawn in to help shape the cookies.

    This one is fantastic (as usual) and reminded me of the store bought no bakes that’s are stupid expensive and loaded with sugar.

  4. will this recipe work with using all purpose flour instead of almond flour? also what kind of texture do these cookies have after baking & cooling? also do you recommend storing room temp or refigerated to keep the texture solid; how many days will they keep before they start to turn soft & cakey? thank you

    • This recipe won’t work with AP flour – it not a 1:1 sub for almond flour. The cookies are a little crispy around the edges and softer in the middle. You can store them in the refrigerator, freezer, or at room temperature. They will keep at room temperature for a couple of days – beyond that we’re not sure because they usually are all gone pretty quick!

  8. Thank you for the recipe. I enjoyed the flavor (added a little maple syrup to the unsweetened applesauce and sprinkled cinnamon and sugar on top). I wonder whether these cookies turn out crisp-ish for you. I know, between the wetness of the applesauce and the fat content of the almond flour, this may not be possible. But it would be nice to have a bit of crispier texture when biting into the cookie. Any suggestions?

  10. My organic almond flour is not super fine, therefore the cookies came out somewhat gritty. Should I grind the almond flour in a blender before making this recipe again. My husband is a diabetic so he just put a little peanut butter on them and said they it worked.

    • Both the post title and opening paragraph of the post specifically say no wheat flour. almond flour is not a wheat flour.

  17. Incredibly good for a cookie with no sugar nor flour. One excellent way to diet with natural sweet cookies. Specially for my Hawaiian friend, since she can eat food with gluten.
