These soft cottage cheese bagels need just 2 ingredients to make the bagel dough. They are low carb and keto-friendly. The bagels are easy, quick and ready in less than 30 minutes.
This is one of the easiest low carb bread recipes I’ve ever made. There is no need to blend or wring dry the cottage cheese. The cottage cheese adds flavor and protein to these bagels.

- Almond flour
- Cottage cheese
Almond flour: You will want to use a superfine blanched almond flour to make these bagels. The finer texture helps it act more like a flour. I like using Kirkland superfine almond flour sold at Costco.
Cottage cheese: I used 4% milkfat cottage cheese but it should also work with low fat cottage cheese. This recipe works best with a high protein cottage cheese like Good Culture brand. If you don’t like cottage cheese, I also have a version that uses Greek yogurt.
How to Make Low Carb Cottage Cheese Bagels
- The almond flour and cottage cheese are mixed together until a dough forms. You will need to knead the dough a few times with your hand to get a cohesive dough. While this will not be like your typical elastic dough made with regular flour, you should end up with a dough that is soft and malleable enough that you can roll it and shape it.
- Divide the dough into six equal portions. Roll them into 6.5 inch ropes. Then bring the two ends of each rope together to form a circle.
- If desired, you can brush the bagels with egg wash which will give them a darker and more golden brown finish. This is optional. The bagels still turn out well without an egg wash finish, but they will be a little paler.
- You can also add your favorite bagel toppings. I like adding everything bagel seasoning without salt.
- The bagels are then baked for about 20 minutes or until done.
Texture
These are not like traditional chewy bagels made with flour. However, they are soft and bread-like. And when sprinkled with everything bagel seasoning or toasted and spread with cream cheese, they do make a good low carb bagel substitute.
These bagels are also not as big as regular bagels. They are about the size of baked donuts. I do have a keto bagel recipe that has a little bit of chewy texture to them and they bake up the size of regular bagels.

Ingredients
- 2 cups (183 g) blanched superfine almond flour
- 1 cup (220 g) small curds cottage cheese, 4% milkfat
Instructions
- Preheat oven to 375°F (191°C). Line a large baking sheet with parchment paper (or a silicone baking mat).
- Add almond flour and cottage to a large mixing bowl. Stir with a spatula until the cottage cheese is fully incorporated into the almond flour. Knead the mixture by hand for a minute or two until you have a cohesive and malleable dough. Transfer the dough onto a lightly floured (using almond flour) surface.
- Divide the dough into six equal portions (I recommend using a scale to weigh the dough). Take each piece of dough and roll into a 6.5 inch rope. Take the two ends of a rope to form a circle, pinching the edges to seal the circle. (If your dough is breaking as you try to roll it or when you try to form a circle, then knead it a few times in your palm to make it more malleable). Place bagel onto prepared baking sheet. Repeat with remaining dough, spacing bagels at least 1 inch apart.
- If adding optional egg wash, add 1 egg and 1 tbsp water to a small bowl and whisk. Then brush beaten egg mixture over the surface of each of the bagels.
- If adding seasonings or toppings, sprinkle them on at this time. I added everything bagel seasoning without salt.
- Bake bagels for about 20 minutes or until golden brown and cooked. If you are not using egg wash your bagels will be a little paler in color when they are done.
Notes
- These bagels are not the same size as regular bagels. They are about the size of baked donuts. They also don't have the same texture as regular bagels but they do have a bready texture.
- The egg wash is optional. It won't change the taste or texture of the bagels but it does help them bake up a more golden brown.
- Make sure to use a superfine almond flour. I use Kirkland brand sold at Costco.
- This recipe works best with a high protein cottage cheese like Good Culture brand. I used Good Culture brand (Amazon | Target)* which contains 14 grams or protein per 1/2 cup.
