This creamy strawberry fudge is low carb and keto-friendly. The fudge needs just 3 ingredients and is easy to make. No candy thermometer or stove needed. The fudge stores well and can also be gifted.
This creamy fudge has pieces of strawberries mixed throughout. It is an easy dessert to make for whenever youโre in the mood for a little sweet treat.
Ingredients
- Sugar-free white chocolate chips
- Sweetened sugar-free coconut condensed milk
- Freeze-dried strawberries
Sugar-free white chocolate chips: Make sure to use white chocolate chips that are sweetened with erythritol or Stevia. This recipe does not work with chocolate chips sweetened with monkfruit.
Sweetened sugar-free coconut condensed milk: Sweetened sugar-free condensed milk is added in to make the fudge creamy and smooth. I use sugar-free sweetened coconut condensed milk for the fudge because it has less carbs than sweetened sugar-free regular condensed milk.
Freeze-dried strawberries: A small amount of freeze-dried strawberries are added to the fudge to add strawberry flavor. Freeze-dried strawberries are key to adding a lot of strawberry flavor without all of the moisture. Freeze-dried strawberries are not always considered low carb or keto friendly, but this recipe uses a very small amount.
How to Make Keto Strawberry Fudge
- The chocolate chips and condensed milk are first melted until smooth. The freeze-dried strawberries are crumbled and mixed in.
- The fudge batter is then transferred to your prepared loaf pan and placed into the fridge until set.
- Once set, cut the fudge into small squares with a large sharp knife.

Expert Tips
- Avoid using white chocolate chips sweetened with monkfruit (like ChocZero brand) because the fudge will not set. I used Lilyโs white chocolate chips sweetened with erythritol and Stevia.
- If you want to make the fudge pink, you can add a few drops of red or pink food coloring.
- Make sure to use freeze-dried strawberries and not fresh or frozen strawberries which have too much moisture. Freeze-dried strawberries are usually found with dried fruit at the supermarket and can also be purchased online.

3 Ingredient Keto Strawberry Fudge
Ingredients
- 9 oz (255 g) sugar-free white chocolate baking chips see note before starting
- 5 tbsp (2.5 fl oz/ (74 ml) sweetened sugar-free coconut condensed milk
- 2 tbsp (2 g) freeze dried strawberry slices crumbled into coarse crumbs
Instructions
- Line an 8 inch x 4 inch loaf pan with parchment paper leaving some overhang for easy removal later.
- Add white baking chips and coconut condensed milk to a large microwave-safe mixing bowl. Heat in 15-30 second intervals, stirring in between with a spatula, until mixture is melted and smooth. You do want to stop as soon as your mixture is smooth because you don't want to overmix which will cause the oils in the chocolate to start separating. You can also melt the chocolate mixture on the stove using the double boiler method. Gently fold in the freeze-dried strawberries with a spatula, just until they are evenly distributed.
- Working quickly, transfer the mixture into your prepared loaf pan. It is important that you do this right away as soon as the fudge mixture is ready because it will begin to cool and thicken soon after. Use your spatula to smooth and even the surface. If you find that your fudge is getting oily on the surface, you can gently blot the oil with a paper towel. If desired, you can garnish the surface with a little more crumbled strawberries.
- Place fudge into the freezer until set (mine took about 20-30 minutes but timing may vary depending on the brand of baking chips or condensed milk). Cut fudge into 1-inch pieces with a sharp knife (if fudge is too firm, let it warm up at room temperature for about 15-30 minutes before cutting). Store uneaten fudge in an airtight container in the fridge or freezer.
Notes
- Sugar-free white baking chips note 1: I used one (9 oz) bag of Lily's sugar-free white chocolate style baking chips. Please note that 9 oz refers to weight, not volume. Make sure you use sugar-free white baking chips sweetened with erythritol or Stevia. Ones that are sweetened with monkfruit (like ChocZero brand) will not work for this recipe.
- Sugar-free white baking chips note 2: I also recommend that you start with a new, unopened bag. White baking chips that are old or have been previously opened and exposed to air do not melt well. Even a new bag of baking chips that was previously opened just a few days ago may have issues melting.
- I used Lily's sugar-free white baking chips and Nature's Charm sugar-free coconut condensed milk.*
- Freeze dried strawberries: You must use freeze dried strawberries and not fresh strawberries which have too much moisture. Freeze dried strawberries are usually found with dried fruit in grocery stores. They can also be purchased online (Amazon | Walmart | Target)*
