These healthier pumpkin oatmeal cookies are soft and chewy. They are just 3 ingredients and don’t contain any flour, eggs, refined sugar, dairy, butter or oil. The cookies can easily be customized and store well.

These pumpkin cookies are a quick and easy cookie recipe that works well for a snack or dessert. You can also customize them with spices and other mix-ins to suit your personal preferences.

Pumpkin: These cookies get their pumpkin flavor from pumpkin puree. You can use canned or homemade.
Quick oats: Make sure to use quick oats which bind better and cook faster than rolled or old fashioned oats. Quick oats are old fashioned oats that are smaller and thinner pieces.
Honey: The cookies are lightly sweetened with honey. You can use other liquid sweeteners but the amount may need to be adjusted. If using maple syrup, you will need to add more to reach the same level of sweetness and would need to also adjust baking time.
How to Make Healthier Pumpkin Oatmeal Cookies
- The pumpkin and honey are first mixed together. The oats are then stirred in until fully incorporated. Taste and adjust sweetness as needed.
- If adding any spices or mix-ins, add them in now.
- Use a 1.5 tablespoon cookie scoop to scoop the dough. Release it onto your prepared baking sheet.
- Flatten the cookies with the palm of your hand or the back of a metal spoon until they are thick round disks about 1/4 inch thick.
- Bake cookies for about 15-20 minutes or until done.
Cookie Texture
The cookies are soft and chewy, similar to baked oatmeal but in cookie form. The cookies are only lightly sweetened since they are meant to be healthier cookies. You can make them sweeter by adding more syrup or adding sweet mix-ins like chocolate chips or dried fruit.
Expert Tips
- If you don’t have quick oats, you can add rolled oats to a food processor and pulse them for a few seconds until they have the same consistency as quick oats.
- This is meant to be a simple pumpkin oatmeal cookie recipe. If you prefer warm spices with your pumpkin baked goods, you can add cinnamon, nutmeg or pumpkin pie spice to the cookie dough.
- You can make the cookies bigger or smaller to suit your personal preference.

Ingredients
- 1/2 cup (122g) pumpkin puree
- 2 tbsp (1 fl oz/30ml) honey, or more as needed
- 1 cup minus 1 tbsp (80g) quick oats
Instructions
- Preheat oven to 350°F (177°C). Line a large cookie sheet with parchment paper or a silicone baking mat.
- Add pumpkin and honey to a large mixing bowl. Mix until the ingredients are fully combined. Add in oats and stir until they fully incorporated. Taste and adjust sweetness if needed. If adding any mix-ins, add them in now and stir until evenly combined.
- Use a 1.5 tbsp cookie scoop to scoop cookie dough and release onto prepared baking sheet, spacing cookies 1.5 inches apart.
- Use the back of a metal spoon or the palm of your hand to flatten dough until they are thick round disks, about 1/4 inch thick. Smooth and round the edges of the disks if needed. The cookies will not spread much during baking, so shape the cookies how you want the final outcome to be.
- Bake cookies for about 15-20 minutes or until done. Let cookies cool before removing and eating. Store cookies in an airtight container in the fridge or freezer.

These are quite tasty, a snack I can feel good about and share with the grandkids. I did add cinnamon, ginger and cloves as well as some chocolate and butterscotch chips.

Could I substitute mashed bananas instead of honey?
We haven’t tested this recipe with bananas instead of honey. You can use other liquid sweeteners but the amount may need to be adjusted.
I made this with blended rolled oats (that may or may not be 2 years old). And pumpkin pie mix instead of pumpkin puree. I liked them but my 3 and 5 yo boys did not like them. Would have been better with chocolate chips and maybe more honey.
My dog liked them too.

I did make them. I baked the amount of time in recipe, it they were still very moist. Are they supposed to have the consistency of cookies?

You can use canned or homemade pumpkin puree. We haven’t tried this recipe with a grated pumpkin, you might get a different texture.
