Matcha Green Tea Sugar Cookies
So my love affair with pandan has died down a bit. While I still enjoy the taste of pandan in my desserts, when I eat too much of it, it does make me feel a little sick. Matcha on the other hand, I don't seem to ever get sick of. I think because matcha powder isn't sweet by itself and is slightly bitter. After making soft rolled sugar cookies for Boyfriend, I decided to make some matcha green tea ones for myself.
I really need to get some more cookie cutter shapes. Other than some Christmas ones, I only have hearts and stars. Since I already used hearts for the regular sugar cookies, I used stars this time. These cookies were small and cute and taste great with a cup of tea.
Match Green Tea Soft Sugar Cookies
Ingredients
- 1/3 cup shortening
- 1/3 cup butter
- 3/4 cup white sugar
- 1 egg
- 1
teaspoon vanilla extract - 1 3/4 cups all-purpose flour
- 1 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons matcha powder
Directions
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, cream together the butter, shortening and sugar. Stir
in the egg and vanilla. Combine the flour, matcha powder, baking powder and salt,
stir into the creamed mixture until dough comes together. Take dough and roll out on flat surface to about 1/4 inch thick
and use cookie cutter to make cookie shapes. Re-roll the dough scraps
and repeat.
Bake cookies 10 to 12 minutes in the preheated oven, until bottom is
light brown. Remove from baking sheets to cool on wire racks.
