Apple Cranberry Bread with Pecan Streusel Topping- This quick bread is sweet and moist, made with applesauce, dried cranberries and topped with a pecan streusel topping.
This winter weather really makes me crave quick breads. I love the smell of spices throughout the house while they bake and the slices taste delicious warm.
Quick breads are so easy to make. Throw a bunch of ingredients into a mixing bowl, mix, and pour into your loaf pans.
I recently was sent some complimentary cranberry pecans from Oh Nuts. I was previously obsessed with their cinnamon pecans and this year I thought I’d try something new. The cranberry pecans taste just like the cinnamon ones, except with a little bit of cranberry flavor infused. I thought they would be perfect to make a pecan streusel topping on my apple cranberry bread.
In the background, I placed some holly I picked up from Trader Joe’s. I’ve never had real holly leaves before. I love how they look.

Apple Cranberry Quick Bread with Pecan Streusel
Ingredients
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons cinnamon
- 1/4 cup vegetable oil
- 1/4 cup applesauce
- 2 eggs
- 1 cup granulated sugar
- 1/2 cup dried sweetened cranberries
For streusel
- 1/2 cup cranberry cinnamon pecans
- 1/4 cup cold unsalted butter chopped into small cubes
- 1/4 cup brown sugar
Instructions
- Preheat oven to 350°F and grease a 9 x 5 inch loaf pan or line with parchment paper.
- In a large bowl of a stand mixer, add oil, applesauce, eggs, and sugar and mix until smooth. Add in flour, baking soda, salt and mix on very low speed. After flour is mixed in, gradually increase speed to beat out all the flour lumps. Mix until batter is completely smooth and no flour lumps remain. Stir in cranberries. Pour batter into loaf pan.
- For streusel: Combine pecans, cold butter, and brown sugar into a food processor until it becomes a crumbly mixture. Sprinkle streusel over the surface of the bread. Bake in the oven for about 50 minutes or until a toothpick inserted comes out clean.
