Gummy Bear Ice Pops

These fun fruit juice popsicles are filled with chewy gummy bears. They’re a fun summer dessert that are easy to make.

So I know the weather has gotten a lot cooler and it’s not really ice pop season anymore, but it was still fairly warm last weekend when I made these. These were inspired by a post for gummy bear sangria that I saw last month on my name is yeh. I immediately wanted to make an ice pop version.

Instead of alcohol, I decided to fill my molds with juice. I did a few different ones, but my favorite was coconut water because you can see the gummies more clearly.

For the juices, I actually used ZICO’s new line of chilled coconut juices, which I was given complimentary bottles to try. They recently came out with three chilled juices: coconut water, orange juice blend, and pineapple mango juice blend. I’ve been drinking ZICO coconut water for years so I was really excited to try out the new chilled juices. My absolute favorite was the chilled coconut water because it tasted so ridiculously fresh–like I had stuck my straw directly into a coconut. Their regular coconut water is good too, but the new premium chilled one is just amazing. We enjoyed the other varieties too, and I like that they all contain coconut water, giving you extra potassium and they are pretty low in sugar. All three juices are currently available at most grocery stores in San Diego.

These ice pops were so fun to eat, and a bit healthier since they are made with coconut water and fat free gummy bears. The gummies do turn a little hard in the freezer but I’ve always enjoyed my gummy bears when they are extra chewy and a little hard, so I didn’t mind. I do highly recommend using soft gummy bears though because if you use ones that are already on the chewy side (like Haribo), then they will be hard as a rock once frozen.

For my popsicle molds, I use this Norpro set*.

Gummy Bear Ice Pops

Servings: 10 ice pops
Prep Time: 5 minutes

These fun ice pops are filled with chewy gummy bears.

Ingredients

  • about 20 ounces juice I used coconut water and coconut juice blends by ZICO
  • about 100 soft gummy bears about 10 per ice pop; make sure you use a soft variety and not something chewy because they will get harder and chewier once in the freezer

Instructions

  • Fill ice molds with juice, about 2/3 full. Add in about 10 gummy bears to each mold. Using popsicle stick, stir around gummies and trap some with the stick so that they don't all sink to the bottom.
  • Freeze for several hours. Remove according to manufacturer's instructions. (Usually it involves running molds under warm water for a few minutes)

  1. I love this idea for kids especially. What brand of soft gummies do you recommend that would freeze well? I am wondering whether or not I can order some on-line.

  2. I love how this looks! TC would love this even more since the ingredients are two of her favorite things to eat and drink.  

  3. lol on eating ice pops when it gets colder…I know it’s probably still warmer in Florida (I think the high is 82 today), but I’m still eating frozen desserts!
