Microwave Peppermint Candy Cane Fudge

This microwave peppermint flavored fudge is festive and makes a great holiday gift. It’s easy and stores well too.

Fudge is always on my holiday baking list since it’s something that can be made ahead of time and is relatively stress free. The other day, I came up with the idea of making peppermint fudge, but with red swirls mixed in to resemble candy canes. Unfortunately, my initial attempt looked quite sad and nothing like what I had envisioned.

So I put on my best sad face and asked Mr. K to run to the grocery store to pick up more ingredients so I could try again. And surprisingly, he went!

We’re almost done decorating the tree. For those of you who put up a tree, do you have a “good” side and a “bad” side? I try to put my favorite ornaments on the side that most people will see, but I also try to even things out in case people walk around the whole tree. Mr. K doesn’t understand why I put any of the nice ornaments on the other side. He thinks all the ornaments should go on the side people will see and the other side should be left empty or filled with the unwanted ornaments. Can you imagine if you went up close to admire a tree and one side was completely bare?

Back to this fudge. It’s made in the microwave and takes about 5 minutes of prep work. Then let it firm up in the fridge and you’re done. I recommend keeping it in the fridge until you’re ready to gift it.

Microwave Peppermint Candy Cane Fudge

This microwave peppermint flavored fudge is festive and makes a great holiday gift. It's easy to make and stores well, too.

Ingredients

  • 3 cups white chocolate chips
  • 1 (14-oz) can condensed milk
  • 1 tsp peppermint extract
  • 4 drops red food coloring

Instructions

  • Line an 8 x 8 baking pan with parchment paper. In a large microwave-safe bowl, combine chocolate and condensed milk. Microwave for about 30 seconds and remove and stir until chocolate is mostly melted. Microwave again for another 30 seconds and stir again. Repeat again for another 30 seconds. Chocolate should be completely melted and smooth. Careful not to overheat in microwave. Add in peppermint extract and mix again until smooth.
  • Pour fudge into pan and spread evenly across. Add four drops of red food coloring near the four corners of the pan. Using a fork, make figure 8's in the fudge until red food coloring is mixed in and you have swirls of red throughout. Place in fridge for several hours to set. Cut with sharp knife into bite-sized squares.
