These creamy soft coconut truffles are so easy to make. They only need 2 ingredients. No cooking, melting chocolate, or baking is required. The truffles can be made dairy-free. They also store well.
These coconut truffles are the easiest truffles I’ve ever made. The recipe is very forgiving. You also don’t need a stove, microwave or oven to make them because these truffles don’t require any cooking or baking.
Ingredients
- Shredded coconut
- Condensed milk
Shredded coconut: Make sure to use unsweetened shredded coconut because sweetened shredded coconut will make the truffles too sweet. You will want to use finely shredded coconut that is the size of crumbs. If your shredded coconut is bigger than that, you can run the coconut through a food processor until it becomes finely shredded.
Condensed milk: This recipe needs sweetened condensed milk. I prefer regular sweetened condensed milk because I find the truffles come out a little firmer and are easier to shape but I have made them successfully with sweetened coconut condensed milk if you want to make these dairy-free.
How to Make Coconut Truffles
- The coconut and condensed milk are mixed together until a sticky dough forms.
- Scoop the dough with a 1.5 tablespoon cookie scoop and roll the dough between your palms to form smooth balls.
- Roll the balls in some additional shredded coconut.
- Place the truffles into the fridge until they firm up.
Texture
The truffles have a creamy and soft interior and are also a little chewy from the coconut.
Expert Tips
- This is a very forgiving recipe. If you add too much coconut and your dough is crumbly, just add more condensed milk until the dough is sticky and you can roll it. If the dough is too sticky, add more coconut until you can shape it.
- This recipe can be made dairy-free by using sweetened coconut condensed milk. The amount of coconut condensed milk will be different than when using regular sweetened condensed milk.
- Even though this recipe is just 2 ingredients, these balls do taste like truffles. Coconut absorbs some of the moisture from the condensed milk which allows the truffles to firm up. The truffles have a rich and creamy texture just like a truffle.
- You can also make your truffle balls bigger or smaller depending on your personal preference.

2 Ingredient Coconut Truffles
Ingredients
- 2 cups (122 g) unsweetened shredded coconut finely shredded to the size of crumbs, plus additional for coating
- 3.5 fl oz (104 ml) sweetened full fat condensed milk see note for coconut condensed milk version
Instructions
- Line a small sheet pan with parchment paper.
- In a large bowl combine coconut and condensed milk. Stir until you have a sticky dough. When you pinch some of the mixture, it should hold its form. You want the dough to be a consistency that you can scoop and roll into balls. If your dough is too crumbly, mix in a little more condensed milk. If it is too wet or sticky, add more coconut.
- Use a 1.5 tablespoon cookie scoop and pack the dough into the scoop. Release into your palm and roll between palms to form a smooth round ball. You may need to squeeze the dough a few times in your hand to make it more malleable before rolling. Place round ball onto your prepared sheet pan and repeat with the remaining dough.
- Add 2 tablespoons of coconut into a small bowl. Roll each ball in the coconut until it is coated. Place balls back onto the sheet pan. Place coconut truffles into the fridge to firm them up a little (around 20-30 minutes). Store uneaten truffles in the fridge or freezer.
Notes
- You want your coconut to be finely shredded, about the size of small crumbs. I used Let's Do Organic Unsweetened Shredded Coconut (Amazon | Target)* which is already very finely shredded. If your coconut is not the size of crumbs, run it through a food processor until it becomes the size of crumbs.

- The amount of condensed milk needed will vary a little depending on the size of your shredded coconut.
- If using sweetened coconut condensed milk, you will need to use more condensed milk. I used about 2/3 cup (158 ml). The dough will also be a bit softer and the truffles won't be as firm as the regular condensed milk version.
- You can double or triple this recipe to make more truffles. You can also make the truffle balls bigger or smaller depending on your personal preference.
