2 Ingredient Crispy Onion Ring Chips (Keto, Low Carb)

These onion ring chips are so crispy. They are also low carb and keto-friendly. The chips need just 2 ingredients and don’t require any frying. The chips can also easily be customized to create other flavors.

This is my take on the popular crispy onion ring chips. These onion chips come out so crispy! You can add different dried seasonings or herbs to change the flavor of the chips as well.

Ingredients

  • Onions: You will need approximately one medium brown onion for this recipe. The key to the chips not getting too soft is to slice the onions very thin. I sliced mine to 1/8 inch thick using a mandoline slicer.
  • Parmesan cheese: This recipe works best with finely shredded parmesan cheese. Parmesan cheese is the key to the onion rings getting crispy because it creates a crispy coating around the onions.

How to Make Crispy Onion Chips

  • A thin layer of parmesan cheese is spread across your prepared baking sheet. The sliced onion rings are then placed on top. They can be close to touching but should not overlap.

  • The onion ring chips are then baked until the cheese is golden brown. Let the cheese cool about 5 minutes and then lift up the onion chips and flip them over and bake the other side for a few more minutes until it is also mostly golden and crisp.

Texture

The onion rings have a very crispy exterior with a slightly soft interior from the onion. If you’re looking for a more classic onion ring type texture, I do also have an easy crispy keto onion rings recipe.

Expert Tips

  • You can add different dried herbs and seasonings for more flavor. I sometimes add taco seasoning or ground chili powder.
  • You can also serve them just as they are with a dipping sauce.
  • There are a few key steps to getting the onion ring chips to be crispy. First, make sure your onions are very thinly sliced. If they are too thick, they will release too much moisture as they bake and prevent the cheese from crisping up.
  • Second, adding a layer of cheese to the surface of the onions helps ensure that they are crispy on both sides and not just the bottom.
  • Third, baking at a lower temperature allows the cheese to fully crisp and turn golden before the onions start to get too dark.
  • Finally, flipping the onion chips and baking the underside helps make sure the chips are fully crispy on both sides.

These crispy onion ring chips are just 2 ingredients and are low carb and keto-friendly. Inspired by the viral popular recipe, this version is extra crispy.

Ingredients

  • 2 cups (196 g) finely shredded parmesan cheese divided
  • 1 medium onion, thinly sliced to 1/8 inch thickness and patted dry with paper towels (about 119 grams of sliced onions)

Instructions

  • Preheat oven to 350°F (177°C). Line a large baking sheet with parchment paper.
  • Spread 1.5 cups shredded cheese into a thin, even layer on the parchment-lined baking sheet. You want the layer to be thin so that the cheese can crisp up, but without any large gaps so that when the cheese melts, it will all melt together and you'll be able to lift the entire thing as one single sheet of crispy cheese.
  • Arrange the onion rings on top of the cheese in a single layer. They can be very close to each other but should not overlap.
  • Sprinkle the remaining cheese on top of each of the onions. You want to sprinkle enough so that the onions are completely covered in a light layer of cheese which will create a light crispy layer on the onions. How much cheese you need on top can vary depending on the size of the onions. You may need slightly more than 1/2 cup. I use between 1/2 to 3/4 cup.
  • Bake for 30-35 minutes, or until the cheese is crispy and golden. Baking time can vary depending on your oven, how thick your onions are and how thick the cheese layer is. I recommend checking frequently about 20 minutes into baking to prevent your cheese from burning. Once most of the cheese is lightly golden remove the baking pan from the oven but do not turn off the oven yet. Allow the chips to cool for about 5-10 minutes which should allow the cheese to crisp up further and firm up. Very carefully flip the sheet of onion chips over. You should notice there are some spots that are still white or pale and not golden brown. Place back into the oven and bake for 3-5 more minutes to crisp up any sections of cheese that aren't fully golden brown.
  • Remove chips from oven. Let cool for about 10 minutes. Then break into smaller pieces or use food-safe kitchen shears to cut into individual onion chips. Serve chips while still warm with your favorite dipping sauce. Store uneaten chips in the fridge or freezer.

  • You can add dry seasoning blends on top of the onions before baking for more flavor.
  • The amount of onion you need will vary depending on how thick your onions are sliced and how big your onions are. If your onion slices are wide, you won't be able to fit as many on the baking sheet.
