2 Ingredient Healthier Cottage Cheese Fudge (No Refined Sugar, Butter or Oil)
This healthier fudge is soft and creamy. It needs just 2 ingredients and doesn’t require any refined sugar, butter or oil. You also don’t need a stove or candy thermometer. The fudge takes only a few minutes to prepare and stores well.

This fudge is so creamy and smooth. You can’t tell it’s made with cottage cheese and the cottage cheese makes the fudge extra creamy and also a little healthier.
Ingredients
- Dark chocolate
- Cottage cheese
Dark chocolate: This fudge is made with dark chocolate with around 60% cocoa. You can use higher percentage cocoa, but your fudge will be more firm and less sweet. If your chocolate is less than 60% cocoa, the fudge may be too soft. If you want the fudge to be refined sugar free, use a chocolate sweetened with unrefined sugar.
Cottage cheese: This recipe works best with 4% cottage cheese. Try to choose a brand of cottage cheese that blends well. There are some brands that are extra thick and hard to fully blend smooth.
How to Make Cottage Cheese Fudge
- The cottage cheese is blended until smooth.
- The chocolate is melted until smooth.
- The cottage cheese and chocolate are mixed together until the cheese is fully incorporated into the chocolate and you have a uniform chocolate batter.
- Transfer the mixture to your prepared loaf pan.
- Place into the fridge until set. Cut the fudge with a large sharp knife.
Texture
The fudge has a rich, smooth, creamy texture. It is not super sweet since it is made with dark chocolate.
Expert Tips
- Make sure your cottage cheese is brought to room temperature before using. If it is too cold, it will cause the melted chocolate to seize.
- For an extra creamy texture, this fudge needs 4% cottage cheese. Using low fat cottage cheese will result in a chewier fudge.

Ingredients
- 1 cup (226g) cottage cheese, 4%, brought to room temperature, see note before starting
- 2 cups (310g) dark chocolate chips, 60% cocoa , see note before starting
Instructions
- Line a 9 x 5 inch loaf pan or 8 x 4 inch loaf pan with parchment paper.
- Add cottage cheese to a high powered blender and blend until completely smooth. Stop and scrape your blender a few times with a spatula to help the blender blend. Make sure your cottage cheese is room temperature before blending it. If the cottage cheese is too cold, it will cause the chocolate to seize.
- In a large microwave-safe mixing bowl, add chocolate chips. Heat in 15-30 second intervals, stirring in between with a spatula, until chocolate is completely melted and smooth. Transfer the melted chocolate to the blender with the cottage cheese.
- Blend cottage cheese and chocolate for a few seconds until completely smooth and uniform, scraping down the sides of the blender as needed. The mixture will be very thick.
- Transfer your mixture into your prepared loaf pan. Use your spatula to smooth and even the surface. If desired, you can make a wavy pattern on the surface of the fudge using your spatula.
- Place fudge into the fridge for a few hours until set (about 2-3 hours). Cut the fudge into bite-sized pieces (approximate 1 inch squares or a little smaller). Store uneaten fudge in an airtight container in the fridge or freezer.
Notes
- Chocolate note: This fudge should be made with dark chocolate chips that contain around 60% cocoa. If it is less than 60%, the fudge may be too soft. You can use higher than 60% but your fudge will be firmer and less sweet. In general, you want to use chocolate that contains lecithin. Lecithin helps the chocolate stay smooth and the fudge stay creamy. However, if you want to avoid lecithin, the one brand I've had success with is Hu dark chocolate* (which doesn't contain lecithin and is also dairy free and sweetened with unrefined coconut sugar.) I have not had success with Enjoy Life brand, a popular brand that doesn't contain lecithin. When I tested this with Hu dark chocolate, I used 2 cups (281 grams).
- Cottage cheese note: You want to use a brand of cottage cheese that blends well so that the cottage cheese is completely smooth. Some brands that are very thick, like Good Culture, don't blend completely smooth easily. I used Amazon Grocery cottage cheese* for this recipe.

Is there a substitute for cottage cheese? I do believe that has dairy in it or it is dairy?
We haven’t tested this recipe with a substitute for the cottage cheese but we do have a ton of other fudge recipes that do not have cottage cheese!
