2 Ingredient Keto Crispy Sesame Cookies
These crispy sesame cookies are low carb, low sugar and keto-friendly. The cookies need just 2 ingredients and don’t require any flour, eggs, dairy, butter or oil. The cookies store well and can be made ahead of time.
These cookies are thin, crispy and are full of sesame flavor. They take just a few minutes to prepare.
Ingredients
- Sesame seeds
- Sugar-free maple flavored syrup
Sesame seeds: Sesame seeds are blended in a high powered blender or food processor until they resemble a coarse flour consistency.
Syrup: Sugar-free syrup is used to sweeten and bind the cookies. Avoid using syrup sweetened with allulose which is often too thin and can cause the cookies to brown too quickly.
How to Make Sesame Cookies
The sesame seeds are blended until a flour-like consistency. It’s okay if there are some sesame seeds that are not blended.
Drizzle the syrup over the sesame flour. Mix until the mixture resembles a sticky dough.
Use a 1.5 tbsp cookie scoop to scoop and pack the mixture. Release it onto your prepared baking pan. Use slightly wet hands or a slightly wet back of a metal spoon to flatten and shape the cookies into thin round disks.
Bake the cookies for about 12-15 minutes or until the cookies are lightly golden. Allow the cookies to fully cool on the baking sheet before removing them from the baking sheet.
Expert Tips
- Be careful not to overblend the sesame seeds. If you blend too long, the mixture will turn oily and no longer resemble flour.
- If using a blender, the blender will blend the seeds much faster compared to a food processor so you do need to watch the mixture carefully.
- You can also use regular maple syrup if you don’t need the cookies to be low sugar.

2 Ingredient Keto Sesame Cookies
Ingredients
- 1 cup (138g) sesame seeds
- 3-4 tbsp (45-60ml) sugar-free maple flavored syrup, see note
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Add sesame seeds to a small food processor or small high powered blender and pulse until they become the consistency of coarse flour. I used a personal Nutribullet to blend. It's okay if there are a few sesame seeds left unblended. You want to be careful to not overblend because this will make the dough oily. If using a blender, it will only take a few seconds to blend the seeds to a flour so you need to watch the blender carefully.
- Add sesame flour to a mixing bowl. Drizzle syrup on top. Stir with a spatula until all of the sesame flour is evenly coated in syrup. If you pinch a clump of the mixture, it should stick together. If your dough is not sticking, add a little more syrup.
- Use a 1.5 tbsp cookie scoop to scoop the dough, pack it into the scoop to help it hold its shape, and release it onto your prepared baking sheet, spacing the dough about 2 inches apart. Using slightly wet hands or a slightly wetted back of a metal spoon, press down on each dough ball to form a thin round disk (about 1/4 thick). Smooth and round the edges of each disk. The cookies will not change shape during baking so you want to shape them how you want the final outcome to be.
- Bake cookies for about 13-15 minutes until the cookies look set and are lightly golden on the surface. Allow cookies to fully cool on the baking sheet. They will continue to firm up and set as they cool. Once fully cooled and set, the cookies are ready to eat. Store any uneaten cookies in an airtight container for 1-2 days at room temperature, around 3-4 days in the fridge or about 1-2 weeks in the freezer.
Notes
- Sesame note: I used raw sesame seeds.*
- I use a personal Nutribullet* to blend.
- Syrup note: I used ChocZero brand maple flavored syrup.* You can use other brands, but we recommend a thick syrup, which usually is found with monkfruit sweetened syrups. Allulose based syrups tend to be too thin and will brown the cookies too quickly.
