2 Ingredient No Bake Keto Coconut Balls

These coconut balls are an easy dessert that is also low carb, low sugar and keto-friendly. The coconut balls need just 2 ingredients and don’t require any baking or cooking. The balls are lightly sweet and full of coconut flavor.

These coconut balls make a great quick and easy dessert that can be made ahead of time. You can also coat them in chocolate for an even more decadent treat.

Ingredients

  • Finely shredded unsweetened coconut
  • Sugar-free sweetened coconut condensed milk

Unsweetened coconut: This recipe works best with finely shredded unsweetened coconut. Some brands make thicker shreds which don’t work quite as well. Thinner, finer shreds will melt and blend better into the ball.

Sugar-free coconut condensed milk: This recipe uses sugar-free sweetened coconut condensed milk which acts as a binding agent for these coconut balls. I used store bought coconut condensed milk though you can make your own if you can’t find any. The recipe can also be made with sugar free sweetened regular condensed milk but the amount needed will be a little different. When the shredded coconut is combined with the condensed milk, the coconut will absorb the moisture from the condensed milk, resulting in a solid coconut ball treat.

How to Make Coconut Balls

  • The shredded coconut and condensed milk are combined until you have a sticky dough. Use a 1.5 tablespoon cookie scoop to scoop the mixture and form into round balls.
  • Place balls onto a parchment paper lined baking sheet. Coat the balls in shredded coconut. Put the balls into the fridge until they firm up. They are then ready to be eaten.

Expert Tips

  • This recipe works best with very finely shredded coconut. Very finely shredded coconut will bind better and blend better into the ball.
  • This is a very forgiving recipe. If your coconut mixture is too crumbly or falling apart, you can add more condensed milk. If your mixture becomes too sticky, you can add more shredded coconut.
  • The balls are lightly sweet. If you prefer sweeter, you can coat the balls in melted chocolate or powdered sweetener instead of coating them with shredded coconut.

These low carb, low sugar and keto-friendly coconut balls are an easy dessert. You only need 2 ingredients and there is no baking or cooking required.

Ingredients

  • 1 cup (102 g) finely shredded unsweetened coconut plus additional 2 tbsp for rolling (see note before starting)
  • 1/3 cup (78 ml) sugar-free sweetened coconut condensed milk

Instructions

  • Line a small sheet pan with parchment paper.
  • In a large bowl combine coconut and condensed milk. Stir until you have a sticky dough. When you pinch some of the mixture, it should hold its form. If your dough is too crumbly, mix in a little more condensed milk. If it is too wet or sticky, add more coconut.
  • Use a 1.5 tablespoon cookie scoop and pack the dough into the scoop. Release into your palm and use your hands and fingers to pinch and shape the dough until it forms a round ball. I found that the dough did not do well rolling to form a ball but I was able to pinch and shape into it into balls. Place ball onto your prepared sheet pan and repeat with the remaining dough.
  • Add 2 tablespoons of coconut into a small bowl. Roll each ball in the coconut until it is coated. Place balls back onto the sheet pan. Place coconut truffles into the fridge to firm them up (mine took less than 30 minutes). Store uneaten truffles in the fridge.

Notes

  • Shredded Coconut Note: Use very finely shredded coconut, about the size of small crumbs. My favorite brand to use is Let's Do Organic Unsweetened Shredded Coconut (Amazon | Target).* I've also made these with Bob's Red Mill Unsweetened Shredded Coconut (Amazon | Walmart)* which is also very fine though not as fine as Let's Do Organic brand.
  • I used Nature's Charm sugar-free coconut condensed milk.* You can also use sugar-free sweetened condensed dairy milk but the amount needed to form the dough will be different. If you can't find sugar-free coconut condensed milk, you can also make your own. Unfortunately, I don't have a recipe at this time but there are many other recipes available on the internet.

  • The coconut balls are lightly sweetened. If you prefer sweeter desserts you can dip the balls in melted chocolate or powdered sweetener instead of coating them in more coconut.
  • If you are on a keto diet, please remember to look at net carbs and not just total carbs in the estimated nutrition. The net carbs count excludes fiber and carbs from sugar alcohols.
