I have partnered with LA VICTORIA® in celebration of their 100th Anniversary to share this easy dish using their mango habanero salsa. One of my favorite simple dinners is grilling, baking or pan searing fish and topping it with salsa. It’s so flavorful and easy.

LA VICTORIA® Mango Habanero Salsa is packed with flavors and quite a bit of heat. I prefer my salsa to be chunky, so I like finding real chunks of mangoes, onions, tomatoes and peppers with every scoop. The sauce is sweet, savory and spicy.

To balance out the heat, I served my salmon with brown rice and steamed broccoli. You can also add fresh avocados to the salsa itself to tone down the heat if you prefer things less spicy.

As I mentioned above, LA VICTORIA® is celebrating its 100th Anniversary! I was not aware they’ve been around so long, but my family enjoys their salsas, taco sauces and enchilada sauce. I especially like that all their sauces and salsas are made in California using California tomatoes.

To commemorate such a big milestone, they are hosting several dinners including one in San Diego which I’m excited to attend.

The dinner will be at the Junipero Serra Museum with chef Christine Rivera of Galaxy Taco creating a multi-course menu that all incorporate LA VICTORIA salsas, sauces and chiles. OB-based indie rock band The Verigolds will be providing music. There will also be five San Diego artists who will showcase an original piece that represents “Modern, West Coast Lifestyle” while embodying the LA VICTORIA® brand. There is a grand prize of $7,500, while the second- and third-place winners will take home $1,500 and $1,000. Pan Seared Salmon with Mango Habanero Salsa

Ingredients

  • 2 tbsp olive oil
  • 2 (6-oz) salmon fillets
  • 4 heaping tbsp of LA VICTORIA® Mango Habanero Salsa
  • 1 tsp chopped cilantro

Instructions

  • Add oil to a large skillet and bring to medium high heat. Add in salmon once the oil is heated.
  • Cook salmon on both sides until salmon is fully cooked and develops a light brown sear on both sides.
  • Dish out salmon. Top each fillet with 2 tbsp salsa. You can always add more or less depending on your spicy preference. You can also add fresh avocados to the salsa if you want to tone down the spice. Garnish salmon with cilantro. Serve salmon with grains and vegetables of your choice. I served mine with brown rice and broccoli.
