3 Ingredient Cottage Cheese Breadsticks (No Eggs)
These cottage cheese breadsticks are soft and fluffy. They need just 3 ingredients and don’t require any eggs or yeast. The breadsticks are easy to prepare and taste like restaurant-style breadsticks. You can have homemade breadsticks in about 30 minutes.

These breadsticks are soft, fluffy, and garlicky. They taste just like breadsticks you would get at a restaurant, but they are so easy to make at home. The cottage cheese adds extra flavor and a boost of protein.
Ingredients
- Self-rising flour
- Cottage cheese
- Garlic herb butter
Self-rising flour: Self-rising flour is a flour blend that already includes a leavening agent and salt. I like using self-rising flour because it saves a few extra steps, but if you don’t have self-rising flour on hand, you can make a homemade self-rising flour blend with all purpose flour, baking powder and salt.
Cottage cheese: This recipe works best with 4% cottage cheese. I recommend a cottage cheese that is easy to blend smooth. Some of the high protein cottage cheese brands can be more difficult to blend.
Garlic herb butter: Garlic herb butter is a butter already infused with garlic and herbs. It is commonly found at the grocery store. The breadsticks are brushed with garlic herb butter to give them flavor.
How to Make Cottage Cheese Breadsticks
- Blend the cottage cheese until smooth. Mix the cheese with flour until a soft dough forms.
- Divide the dough into 12 pieces. Roll each portion into a smooth log, about 6 inches long.
- Place the logs onto your prepared baking sheets. Brush the surface with melted garlic herb butter.
- Bake for about 15-20 minutes or until golden brown and cooked through.
- Brush the breadsticks with more melted garlic herb butter after removing the breadsticks from the oven. Allow them to cool slightly before serving.
- If desired, you can also sprinkle grated parmesan cheese and finely chopped parsley for garnish.
Texture
These breadsticks taste just like the type of breadsticks that often are served at restaurants. They are very soft and fluffy, though the cottage cheese does give them a slight tangy flavor. However, the tangy flavor works really well with the garlic herb butter flavor.
Expert Tips
- The breadsticks have a lot of flavor on their own but you can also serve them with some marinara dipping sauce.
- The breadsticks are best enjoyed warm. They will become more dense once fully cooled.
- This recipe works best with 4% cottage cheese because it gives the breadsticks a softer, richer texture. Low fat cottage cheese will make the breadsticks more chewy rather than soft and fluffy.

3 Ingredient Cottage Cheese Breadsticks
Ingredients
- 2 cups (460g) 4% small-curd cottage cheese
- 3 cups (410g) self-rising flour, plus more for dusting, see note before starting
- 6 tbsp (84g) melted garlic herb butter, for brushing
Instructions
- Preheat your oven to 400°F (205°C). Line two baking sheets with parchment paper.
- Add the cottage cheese to a blender and blend until completely smooth. Transfer the blended cheese to a large mixing bowl and add the flour. Mix until the flour is incorporated. Lightly flour your hands and work surface and transfer the dough to your floured work surface. Knead the dough until it is smooth. The dough should be slightly sticky but manageable.
- Lightly flour your work surface again and your hands. Divide the dough into 12 equal portions. Then roll each portion into a 6-inch log (the log will be a little less than 1 inch thick).
- Arrange the breadsticks on the baking sheets so they are spaced about 2 inches apart and brush generously with garlic butter.
- Bake for 15-20 minutes, or until the breadsticks are puffy and golden on top.
- Remove from the oven and immediately brush with more garlic butter. Allow the breadsticks to cool a little before serving, but make sure to serve them warm. You can also add some grated parmesan cheese and finely chopped parsley for garnish. Serve with a side of marinara sauce if desired. Store any uneaten breadsticks in an airtight container in the fridge or freezer. Reheat before eating leftovers.
Notes
- Cottage cheese note: This recipe works best with a cottage cheese that blends easily. I found that very high protein cottage cheese, such as Good Culture (around 14 grams per 1/2 cup serving), does not blend as well and will be too thick and not watery enough for the recipe. I used Amazon Grocery cottage cheese which blends easily and contains 13 grams of protein per 1/2 cup serving.
- I used Kerrygold garlic & herb butter.*
- Self-rising flour note: There are 2 main kinds of self-rising flour sold in the US. One that is a lower protein (2 grams per 1/4 cup serving) flour and one that has a regular amount of protein (3 grams per 1/4 cup (30g) serving). The amount of protein affects how much liquid is absorbed. For this recipe, I tested it with Gold Medal self-rising flour* (regular amount of protein). Please use a self-rising flour with a regular amount of protein (3 grams per 1/4 cup), or make your own self-rising flour with the recipe below.

- Homemade self-rising flour blend: To make your own self-rising flour, combine 3 cups all purpose flour, 4.5 tsp baking powder and 1.5 tsp salt. Whisk together until evenly combined. Make sure your all purpose flour has a regular amount of protein (3 grams per 1/4 cup). Most brands in the US contain this amount but there are some brands with higher protein (4 grams per 1/4 cup) such as King Arthur Flour and Bob's Red Mill. You do not want a high protein flour for this recipe because the dough will be too dry.
