3 Ingredient Banana Donuts

These banana donuts are soft and fluffy. They need only 3 ingredients and don’t require any eggs. The donuts also don’t require any frying and are easy to make. You can coat them in your favorite donut toppings.

These baked donuts are so easy to make. You can bake them in a donut pan or mini muffin pan for bite-sized treats. They are lightly sweet on their own so you can eat them plain or coat them in sugar or icing for a sweeter treat.

Ingredients

  • Bananas
  • Self-rising flour
  • Oil

Bananas: This recipe works best with overripe or very ripe bananas which are sweeter than just ripened bananas. The donut batter is only sweetened with bananas.

Self-rising flour: Self-rising flour is all purpose flour that is already premixed with baking powder and salt. I prefer using self-rising flour when possible because it saves a few extra steps, but you can also easily make your own self-rising flour by combining all purpose flour with baking powder and salt.

Oil: I recommend using a neutral flavored oil like canola oil. The oil adds some necessary fat to the donuts to help them stay soft, moist and fluffy.

How to Make Banana Donuts

  • The bananas are first pureed in a blender until smooth.
  • Transfer the bananas to a large mixing bowl and add in the flour and oil. Mix until you have a smooth batter.
  • Use a 1.5 tablespoon cookie scoop to scoop the batter into your prepared mini muffin pan.
  • Bake donuts for about 20 minutes or until golden and done.
  • Allow donuts to cool before eating or coating with your preferred donut toppings.

Texture

These donuts are soft and fluffy. They do not have the texture of a fried donut. They have a texture of a healthier, baked donut and are more cake-like. If you are looking for a more traditional fried donut texture, I do have a recipe for banana donuts that are fried.

Expert Tips

  • The donuts are only lightly sweetened since donuts are usually rolled in sugar or covered in icing. If you want to eat these plain and you want to make them a little sweeter, you can add 1-2 tablespoons of sugar to the donut batter.
  • I baked these in a mini muffin pan because I wanted to use a pan that is more commonly owned but they can also be baked in a mini donut pan or in a donut maker.
  • This recipe works best with pureed bananas. I tested the recipe with mashed bananas and the donut texture was much heavier.
  • Make sure to mix the batter by hand and don’t just add the flour and oil to the blender, which will cause the batter to be overmixed.

Ingredients

  • 1 cup (232 g) banana puree see note before starting
  • 1 cup (130 g) self-rising flour see note before starting
  • 2 tbsp (1 fl oz/30 ml) canola oil

Instructions

  • Preheat oven to 350°F (177°C). Grease 14 cavities of a mini muffin pan.
  • Add banana puree, self-rising flour and oil to a large mixing bowl. Mix with a spatula or whisk until no flour lumps remain.
  • Use a 1.5 tbsp cookie scoop to scoop the batter and release it into your prepared mini muffin pan.
  • Place muffin pan in the oven and bake donuts for about 20 minutes or until done. The surface of the donuts should be golden and when you apply light pressure to the surface, they should bounce back. Let donuts cool fully before eating. If desired, you can coat the donuts in sugar, cinnamon sugar or your favorite icing before serving. See notes section for the optional cinnamon sugar coating I used. Store uneaten donuts in the fridge or freezer.

Notes

  • Banana note: 1 cup/232 grams is for the bananas after they have been pureed. This recipe works best with overripe or very ripe bananas because they are sweeter and there is no other sweetener being used in the donut batter. You will want to puree the bananas in a blender until completely smooth before using them in the recipe. I did test a mashed banana version and the donut texture was not as good. You will need approximately 3 large bananas to produce 1 cup of banana puree (but please measure out 1 cup for the recipe and don't just use the entire amount).
  • Self-rising flour note: There are 2 main kinds of self-rising flour sold in the US. One that is a lower protein (2 grams per 1/4 cup serving) flour and one that has a regular amount of protein (3 grams per 1/4 cup (30g) serving). The amount of protein affects how much liquid is absorbed. For this recipe, I tested it with Gold Medal self-rising flour* (regular amount of protein). Please use a self-rising flour with a regular amount of protein (3 grams per 1/4 cup), or make your own self-rising flour with the recipe below.
  • Homemade self-rising flour: Whisk together 1 cup all purpose flour, 1.5 teaspoons baking powder and 1/4 teaspoon salt. Make sure your all purpose flour has a regular amount of protein (3 grams per 1/4 cup). Most brands in the US contain this amount but there are some brands with higher protein (4 grams per 1/4 cup) such as King Arthur Flour and Bob's Red Mill, which will not work well for this recipe.
  • I used a Wilton mini muffin pan.*

  • Sweetness note: The donuts are only very lightly sweetened since donuts are usually coated in icing or sugar. If you plan on eating them plain you can enjoy them as is. If you prefer sweeter, you can add 1-2 tablespoons of sugar to the donut batter before baking.
  • Optional Cinnamon Sugar Coating: For the coating, I mixed 2 (heaping) tbsp sugar + 1/2 tsp cinnamon and put it into a large Ziploc bag. You can also leave off the cinnamon if you don't like cinnamon and just coat in sugar. You can also use 2 tablespoons of cinnamon sugar mix (like McCormick's cinnamon sugar). Put donut holes in the bag, seal the bag, and shake the donuts until they are coated in cinnamon sugar. I find that the donuts coat better if you allow them to fully cool. I baked mine the night before and coated them in the morning before serving.

  2. Have yoie tried any other ingredient to substitute for canola oil. I dont like using seed oils.

    • We have not tested this recipe with another oil but I do recommend using a neutral flavored oil.

  3. I’d like to make these with some protein powder bc I never get enough protein. How might one do that, add more bananas? I also lve at 800o ft.

    • Hello! We have not tried adding protein powder to these donuts so we are not sure how you would need to adjust the recipe. If you give it a try let us know how it turned out!

  13. Can you use baby food banana in the jar.

    • We have not tested that with this recipe so we are unsure if the results would be the same but if the only ingredient is bananas it should work just fine!
