Fudgy, chewy brownies with swirls of caramel throughout. These brownies only require 3 ingredients. They don’t need any flour, butter or oil. The brownie batter takes less than 10 minutes to prepare. These brownies are rich and full of chocolate and caramel flavor.
These brownies are so rich and fudgy. They also have a lot of caramel flavor. Caramel is incorporated into the brownie batter and is also swirled on top. Even though these brownies don’t contain any flour, they have a texture just like regular fudgy brownies.

Semi-sweet chocolate chips: These brownies use melted semi-sweet chocolate chips as their brownie base. Make sure to use semi-sweet and not milk, dark or white chocolate, which will affect the texture and the ability for the brownies to set properly.
Dulce de Leche: Dulce de leche is a milk-based caramel. While caramel is usually made from just water and sugar, dulce de leche is made from slowly simmering milk and sugar until it caramelizes. It has a thicker consistency but tastes just like traditional caramel. The thicker consistency makes it ideal for baking these brownies.
Egg: The brownie batter also contains one large egg. The egg helps develop the brownie structure and contributes to the fudgy consistency.
How to Make Caramel Brownies
- The chocolate chips and dulce de leche are heated together until the chocolate is melted and smooth. The egg is then mixed in.
- The brownie batter is then transferred to your parchment paper lined baking pan.
- Finally, dollops of the remaining dulce de leche are added on top and then swirled into the batter with a knife. The brownies are then ready to be baked.

3 Ingredient Caramel Brownies
Ingredients
- 1 (13.4 oz/380 g) can dulce de leche divided
- 1 1/2 cups (265 g) semi-sweet chocolate chips
- 1 large egg lightly whisked
Instructions
- Preheat the oven to 350°F (177°C). Line an 8-inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal later.
- Measure out 1/2 cup (138 g) of dulce de leche and set aside for swirling in later.
- Add chocolate chips and remaining dulce de leche to a large microwave-safe bowl. Heat in the microwave at full power in 15-30 second increments, stirring in between with a spatula, until the chocolate is completely smooth and melted. The mixture will also be very thick.
- Let the chocolate mixture cool a little so it is still warm but no longer too hot to touch. Then add in the egg. Stir until the egg is fully incorporated and no egg streaks remain. Adding the egg should also make the batter thinner.
- Transfer the batter to your prepared baking pan. Add dollops of remaining dulce de leche on top of the batter. Use a butter knife to swirl the dulce de leche into the batter.
- Bake the brownies for about 30 minutes. During the first part of baking the brownie batter will look unchanged but towards the end of the baking time you should see the brownie batter rise a little. Your brownies are done when the batter has puffed up and a toothpick inserted has only a few crumbs attached.
- Allow brownies to cool fully before cutting with a sharp knife. Because the brownies are so fudgy, I like to heat the blade with warm water before cutting and wipe the blade clean after each cut.
Notes
- Make sure to use semi-sweet chocolate chips and not dark, milk or white.
- Avoid using chocolate chips that don't contain any dairy or dairy-substitute. The brownies do need the milk or milk substitute from the chocolate chips. So brands like Enjoy Life will not work well for these brownies.
- Dulce de leche is sold in cans and usually found next to condensed milk at the grocery store. If you don't have dulce de leche, you can also try making your own using a can of condensed milk. You can find many recipes on the internet for how to make dulce de leche with a can of condensed milk. I have not tried making it myself.
- These brownies are very rich, fudgy and sweet. They are not meant to be a healthy brownie.

Will adding another egg make it more cake like?
We have not tested these brownies with an extra egg, however more eggs tend to give brownies a lighter, drier, and more cake-like texture. You could give it a try but we are unsure what the final result would be!
