I’ve been in the mood for chocolate flavored treats lately so I decided to make these quick and easy chocolate oatmeal cookies. The cookie dough takes only about five minutes to prepare and is made in just one bowl.

Ingredients

  • Semisweet Chocolate Chips
  • Unsweetened Applesauce
  • Quick Oats

Semisweet chocolate chips: The chocolate flavor for these cookie comes from melted chocolate chips. I used semisweet to keep the cookies a little healthier. The melted chocolate also helps sweeten the cookies. I used dairy-free semisweet chocolate chips but you can also use regular semisweet chocolate chips if you don’t need the cookies to be dairy-free.

Applesauce: This recipe uses unsweetened applesauce. Applesauce replaces eggs as a binding agent and keeps the cookies soft. Applesauce can be substituted with mashed bananas.

Quick oats: Quick oats are used in this recipe though you can also use rolled oats. Quick oats are oats that are further processed so that they are finer, smaller and thinner than regular rolled oats.

How to Make Chocolate Oatmeal Cookies

  • The chocolate and applesauce are heated together until the chocolate is fully melted and the mixture is uniform.
  • The oats are then mixed in.
  • A cookie scoop is then used to scoop up the oat mixture and released onto your prepared baking sheet. Use the back of a metal spoon to flatten each cookie dough to the shape of a round disk. The cookies are then baked for about 10 minutes.

Texture and Sweetness

The cookies have a soft and chewy texture. Because I wanted to make these cookies healthier, they are only lightly sweetened. You can adjust the amount of chocolate if you want the cookies to be sweeter.

3 Ingredient Chocolate Oatmeal Cookies

These soft and chewy chocolate flavored oatmeal cookies are so easy to make. They are ready in about 15 minutes from start to finish. The cookies don't require any flour, eggs or dairy.

Ingredients

  • 1/4 cup (42 g)- 1/2 cup (84 g) semisweet chocolate chips, see note
  • 1/2 cup (121 g) unsweetened applesauce
  • 1 cup (88 g) quick oats

Instructions
 

  • Preheat oven to 350°F (177°C). Line a large cookie sheet with parchment paper or silicone baking mat.
  • Add chocolate chips and applesauce to a large microwave-safe mixing bowl. Heat at full power in 30 second intervals, stirring in between with a spatula, until chocolate is completely melted, smooth and mixture is uniform in color. I needed 1 minute in my microwave for the chocolate to be completely melted.
  • Stir in the oats until they are evenly mixed in and fully coated in the chocolate mixture. The mixture will still be very wet and resemble a thick batter rather than regular cookie dough. Use a 1.5 tbsp cookie scoop to scoop up oatmeal mixture and place onto prepared cookie sheet, spacing cookies about 1.5 inches apart.
  • Using the back of a metal spoon, flatten each ball into a thick round disk, about 1/4 inch thick. The cookies do not spread during baking so make sure to shape them how you want the final outcome to be.
  • Bake cookies for about 10 minutes. Let cookies cool completely on cookie sheet before removing. Store uneaten cookies in the fridge or freezer.

Notes

  • If you use 1/4 cup of chocolate chips, the cookies are only very lightly sweetened. If you prefer sweeter cookies, I recommend using 1/2 cup instead and also adding 1 more tbsp of quick oats.
  • I used Kirkland brand dairy free semisweet chocolate chips. Regular semisweet chocolate chips can also be used if you don't need to make these dairy-free.
