This healthier cottage cheese chocolate mousse is smooth, creamy and high protein. It only needs 3 ingredients and doesn’t require any eggs or cream. The chocolate mousse is easy to prepare, requires very little cooking, and you don’t need a candy thermometer.

This chocolate mousse is so easy to make. No need to hover over the stove, whisk the mousse constantly or check the temperature of the chocolate. Instead, the ingredients are blended in a blender and then placed into the fridge to chill. The mousse is also made with cottage cheese instead of cream and butter.

Ingredients

  • Cottage cheese
  • Dark chocolate
  • Maple syrup

Cottage cheese: This recipe works best with a high protein 4% cottage cheese. Low fat cottage cheese is too watery and will make the mousse watery.

Dark chocolate: Dark chocolate is briefly melted in the microwave until smooth.

Maple syrup: A little maple syrup is added to help sweeten the mousse as I found that just using dark chocolate wasn’t sweet enough. You can leave out the maple syrup, but if you do, you should substitute with water to help thin out the mousse so it doesn’t become too thick. Maple syrup can be substituted with a sugar-free syrup.

How to Make Cottage Cheese Chocolate Mousse

  • The chocolate is melted until smooth.

  • Transfer to a bowl or container and place into the fridge to set. You can also directly transfer the mousse into small serving bowls, ramekins, cups if you plan on using them for serving. It is easier to transfer the mousse before it is fully set.

Expert Tips

  • I recommend using a high powered blender to fully blend the cottage cheese until smooth.
  • You can use a sugar-free dark chocolate if you want to reduce the sugar in this recipe. You can also use a sugar-free syrup or skip using the syrup if you find the mousse to be sweet enough without it. If you omit the syrup, you will need to add a little water as a substitute to prevent the mousse from becoming too thick.

3 Ingredient Cottage Cheese Chocolate Mousse

This silky, chocolatey mousse is made with just cottage cheese, melted chocolate and maple syrup. It’s high in protein and healthier than regular chocolate mousse. Enjoy it as a satisfying dessert or a quick, nutrient-dense snack.

Ingredients

  • 1 cup (160g) dark chocolate chips, around 60% cocoa, see note before starting
  • 2 cups (452g) 4% high protein cottage cheese, brought to room temperature, see note before starting
  • 2-4 tbsp (1-2 fl oz/30-59ml) maple syrup

Instructions
 

  • Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each with a silicone spatula, until smooth. Let cool slightly, about 5 minutes.
  • In a high powered blender, blend the cottage cheese and 2 tbsp maple syrup until completely smooth.
  • Add the melted chocolate to the blender and blend again until fully combined, smooth and uniform in color. Taste and if needed, add 1-2 more tbsp maple syrup and blend again. If the mousse seems too thick, you can add 1 tablespoon of water (or more as needed).
  • Transfer the mixture to a bowl or container, cover, and chill in the refrigerator for at least 1 hour, or until it has thickened and set. You can also directly transfer the mousse into the serving containers you plan on using and chill them in the fridge in their individual serving containers (it is easier to transfer the mousse before it is fully set).
  • If desired, garnish mousse with whipped cream, fruit or chocolate shavings before serving. Store any uneaten chocolate mousse in the fridge in an airtight container.

Notes

  • Cottage cheese note: This recipe works best with a high protein cottage cheese that contains between 13 to 14 grams of protein per 1/2 cup (110g) serving. High protein cottage cheese will absorb more liquid and prevent your mousse from being too watery. You also want to avoid using low fat cottage cheese which is too watery. I used Amazon Grocery brand.* Avoid brands like Knudsen which doesn't contain enough protein.

  • Dark chocolate note: Make sure to use dark chocolate chips (sometimes labeled bittersweet chocolate chips) that contain around 60% cocoa. Also make sure your dark chocolate chips contain lecithin. Avoid brands like Enjoy Life that don't contain any lecithin because that ingredient is needed to help keep the chocolate smooth. Chocolate without lecithin may seize and harden once you add in the cottage cheese.
  • This recipe makes around 2.25 cups of mousse, which is divided into 5 servings for the nutrition estimate.
