3 Ingredient Dinner Rolls (No Yeast or Eggs)

These soft dinner rolls are a quick and easy bread recipe to make. They are just 3 ingredients and don’t need any yeast or eggs. You can have fresh bread rolls ready in about 30 minutes.

If you are looking for an easy bread recipe to make, this is it. These rolls are stress-free and don’t need a lot of time. They can also easily be customized.

Ingredients

  • Self-rising flour
  • Greek yogurt
  • Olive oil

Self-rising flour: Self-rising flour is flour that is already mixed with baking powder and salt, saving a few extra steps. Since these bread rolls don’t contain yeast, they need baking powder to rise.

Greek yogurt: This recipe uses plain nonfat Greek yogurt. Make sure you use Greek yogurt and not regular yogurt. Regular yogurt has too much moisture and will cause the dough to be too sticky to work with. The recipe will probably work with low fat or whole milk Greek yogurt but the amount of flour needed may need to be adjusted.

Olive oil: I like using flavored olive oils, like garlic olive oil, to give these rolls more flavor. You can use plain olive oil as well. The olive oil helps the rolls brown on the surface and adds some flavor to the bread.

How to Make Dinner Rolls

The self-rising flour and yogurt are mixed together until a dough forms. Your dough should feel a little sticky but not too sticky to work with. The dough is then divided into 9 pieces and each piece is rolled into a smooth ball. Brush the surface of each of the balls with oil. The rolls are then ready to be baked. When the rolls are finished, you can brush with more oil or melted butter before serving.

Taste and texture

These are plain dinner rolls, best served with your favorite spread. They will have a tangy flavor to them from the yogurt, making them taste a little like sourdough. The rolls are soft with chewy crust, similar to European-style bread rolls.

Variations

This recipe makes plain dinner rolls. If you wish to add more flavors, you can easily customize them by adding other dry ingredients into the dough like cheese or herbs. I don’t recommend adding liquids or wet ingredients as it will change the consistency of the dough.

Ingredients

  • 2 cups (260 g) self-rising flour
  • 1 3/4 cups + 2 tbsp (439 g) plain nonfat Greek yogurt see note regarding amount needed
  • 2 tbsp (30 ml) olive oil can use flavored or plain

Instructions

  • Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, add flour and yogurt. Stir with a spatula until all the flour is fully incorporated and a dough forms. You can use your hand to knead the last bit of flour into the dough, as it gets harder to mix with a spatula towards the end. Your dough should be a little sticky.
  • Divide dough evenly into 9 pieces. Wash your hands clean and dry them but leave them slightly damp and grab one of the dough pieces. Roll it between your hands a few times until it forms a ball (it's okay if it has a few small cracks) and then place it onto the prepared baking sheet. Repeat with remaining dough (wash your hands clean and keep slightly damp for each one), spacing dough balls 2 inches apart.
  • Brush surface of the dough balls with the oil.
  • Place rolls into oven and bake for about 25-30 minutes or until rolls are done. Before serving, brush with more oil or melted butter. Rolls are best consumed warm. When the rolls are cold, they will lose their bread texture so warm them up before serving.

Notes

  • I used garlic flavored olive oil for more flavor. You can use other flavored olive oils or you can use plain.
  • Before starting the recipe, check the nutrition label of your self-rising flour. If you are using a self-rising flour with 3 grams of protein per 1/4 cup, then make the recipe with the amounts as written. However if you are working with a self-rising flour that has 2 grams of protein per 1/4 cup (like White Lily's, Southern Biscuit, etc), then you will need to reduce yogurt to 1.5 cups.
  • When measuring the flour (whether it is all purpose or self-rising), make sure to use the spoon and level method. This means you should spoon the flour into your measuring cup and level off the surface of the knife. If you just dip your measuring spoon into the flour, you will have too much flour added to your dough.
  • Homemade Self-rising flour: If you don't have self-rising flour, you can make your own by whisking together 2 cups all purpose flour + 3 tsp baking powder + 1/2 tsp salt. Please check the protein for your flour. If it has 3 grams per 1/4 cup, then use the amount of yogurt stated in the recipe. If your flour only has 2 grams of protein per 1/4 cup, then reduce yogurt to 1.5 cups.
  • Different brands of Greek yogurt will have a slightly different consistency. I used Kirkland Greek yogurt which is very thick. You may need to add another 1-2 tbsp of flour if your yogurt is runnier. This recipe is very forgiving. You can adjust flour and yogurt as needed until you have a tacky dough.
  • Make sure to use Greek yogurt and not regular yogurt.
