3 Ingredient Keto Cottage Cheese Bread Buns

These cottage cheese bread buns are low carb and keto-friendly. The bread buns need just 3 ingredients and are an easy one-bowl recipe. You don’t even need a mixer to make the bread dough. The breads are great for making sandwiches and more.

These cottage cheese bread buns are soft, flavorful and sturdy enough for sandwiches, burgers, and more. I love how easy they are to make and they can be made ahead of time.

Ingredients

  • Superfine almond flour
  • Cottage cheese
  • Baking powder

Superfine almond flour: The bread buns are made with blanched superfine almond flour. You do want to use superfine almond flour which has a consistency more similar to regular flour.

Cottage cheese: Make sure to use small curds cottage cheese. You can use low fat or whole milk cottage cheese.

Baking powder: I recommend you use aluminum-free baking powder for this recipe. The recipe does use a large amount of baking powder to help the bread buns spread and fluff up and if you use a baking powder that contains aluminum, it may leave a metallic aftertaste.

How to Make Cottage Cheese Bread Buns

  • The almond flour and baking powder are first whisked together. The cottage cheese is then stirred in until a sticky dough forms.
  • Divide the dough into six equal portions and roll each portion into a round ball. Flatten the ball into a 3.5 inch round. If desired, you can sprinkle sesame seeds or bagel seasoning on top of your bread buns.
  • Bake bread buns for about 25 minutes or until golden brown. Once bread buns are cooled, they are ready to be eaten or used to assemble a sandwich or burger. You’ll need two bread buns for each sandwich or burger.

Texture

These cottage cheese bread buns are soft, chewy and bread-like but also sturdy enough to hold sandwich ingredients or a burger patty.

Expert Tips

  • Make sure to use superfine almond flour. You want the almond flour to have the consistency of regular flour otherwise the bread buns will turn out grainy or gritty.
  • Aluminum-free baking powder is used to prevent any potential metallic aftertaste. There are many brands of aluminum-free baking powder. Just check the ingredients on the product label to determine if it is aluminum-free.
  • I recommend using small curds cottage cheese. The cottage cheese is not blended before being added to the dough. If you use small curds cottage cheese, the cheese will melt as the bread buns bake.

These cottage cheese bread buns are just 3 ingredients and easy to make. They are a great low carb and keto-friendly bread alternative which can be used to make sandwiches, burgers and more.

Ingredients

  • 2 cups (183 g) superfine blanched almond flour
  • 1 tbsp (11 g) aluminum-free baking powder
  • 1 cup (220 g) small curds cottage cheese

Instructions

  • Preheat your oven to 375°F (191°C). Line a baking tray with parchment paper.
  • Add almond flour and baking powder. Whisk until baking powder is evenly mixed in. Add in cottage cheese. Mix until you have a sticky dough.
  • Divide the dough into 6 equal portions and roll each portion into a ball. Flatten and shape each ball on the prepared baking sheet, until they are about 3 ½ inch wide rounds. The bread buns don’t spread too much during baking, so make sure to smooth the edges to make them look nice and round like bread buns before baking. If you are adding toppings like sesame seeds, sprinkle them on now.
  • Bake breads for about 25-30 minutes or until the bread buns are golden brown on top.
  • Remove the breads from the oven and let them cool slightly before serving.

Notes

  • This recipe makes 6 bread buns. You will need 2 bread buns to make a closed sandwich. The bread buns are not meant to be sliced/cut in half because they are not that thick.
  • You can add sesame seeds or bagel seasoning as garnish. It is completely optional. The breads are already lightly seasoned from the cottage cheese.
  • The recipe should work with both low fat or whole milk cottage cheese.
  • Make sure to use superfine blanched almond flour. I use Kirkland brand sold at Costco.
  • Make sure to use aluminum-free baking powder. I used Whole Foods 365 baking powder.* I also sometimes use Argo aluminum free baking powder*
