3 Ingredient Keto No Bake Coconut Balls
These no bake coconut balls are low carb, low sugar and keto-friendly. The balls don’t require any baking or cooking. They are just 3 ingredients and don’t require any flour, eggs, butter or oil. They are also easy to customize.
These coconut balls are lightly sweet, creamy and slightly chewy. They make a quick and easy snack or dessert. You can also customize the flavor.
Ingredients
- Finely shredded unsweetened coconut
- Plain Greek yogurt
- Sugar-free honey flavored syrup
Finely shredded coconut: This recipe works best with unsweetened finely shredded coconut. The finer and thinner the shreds, the easier it will be to bind.
Plain Greek yogurt: You can use either plain Greek yogurt or plain Icelandic yogurt. Icelandic yogurt is a little thicker than Greek yogurt and contains more protein, so you may need less coconut if using Icelandic yogurt. You can also use flavored Greek yogurt sweetened with a sugar substitute. Make sure to use Greek or Icelandic yogurt. Regular yogurt is too runny.
Sugar-free syrup: I recommend using a very thick, sugar-free syrup like sugar-free honey flavored syrup. If you use a runny or thin syrup, the mixture will be too wet.
How to Make No Bake Keto Coconut Bites
- The yogurt and syrup are whisked together. The coconut is stirred in until the mixture becomes very thick. Place the mixture into the fridge for about 30 minutes to firm up further.
- Use a 1 tbsp cookie scoop to scoop the mixture. Coat the balls in additional shredded coconut and roll into balls. The balls are then ready to eat though you can also place them back into the fridge to firm up a little more.
Expert Tips
- Try to use very finely shredded coconut. The thinner the shreds, the easier they are to bind.
- You can use flavored keto-friendly Greek yogurts to add other flavors to the coconut balls.

3 Ingredient Keto No Bake Coconut Balls
Ingredients
- 3/4 cup (165g) whole milk plain Greek yogurt, see note before starting
- 2 Tbsp (30ml) sugar-free honey flavored syrup, see note before starting
- 1 cup (70g) finely shredded unsweetened coconut, plus additional 1/4 cup (17g) for rolling, see note
Instructions
- Line a small baking sheet with parchment paper.
- Add yogurt and syrup to a large mixing bowl and mix until evenly combined. Stir in the coconut until evenly combined. Your mixture should be thick and scoopable. If it's not thick enough, you can add more coconut until it becomes a paste-like texture. Taste, and if needed, you can add slightly more syrup (about 1/2 tbsp). Place the mixture into the fridge for about 30 minutes to allow it to thicken slightly more. Add remaining 1/4 cup of coconut to a small bowl and set aside.
- Use a 1 Tbsp cookie scoop to scoop the mixture. Release the ball and coat the ball in the small bowl of coconut. Then gently roll the ball between your palms to form a round ball. Place the ball onto your prepared baking sheet. Repeat with the remaining mixture. If you are finding your mixture is too wet or sticky to work with, you can add more coconut to the mixture.
- Place balls into the fridge for about 1 hour to firm up further. The balls are then ready to eat. Store uneaten balls in the fridge in an airtight container.
Notes
- Yogurt note: Make sure to use a thick, whole milk Greek yogurt. You can also use Icelandic yogurt, which is usually thicker than Greek yogurt.
- Coconut note: This recipe works best with very finely shredded coconut which bind better. You may need to add a little more coconut to the mixture to reach the right amount of thickness. The amount can vary depending on the coconut you are using and the amount of moisture in your yogurt. I made this with Let's Do Organic Unsweetened Coconut.*
- Syrup note: Use a thick syrup so that the mixture is not too wet. I used ChocZero honey flavored syrup.*Â
