This creamy peppermint fudge is low carb, low sugar and keto-friendly. It is just 3 ingredients and easy to make. You don’t need a candy thermometer to make the fudge. It stores well and can be made ahead of time.

This festive fudge is great if you need a quick treat, want to serve an easy dessert or are making something for gifting. You can keep it simple or decorate it.

Ingredients

  • Sugar-Free Dark Chocolate Chips
  • Sugar-Free Coconut Condensed Milk
  • Peppermint Extract

I also garnished the top with sugar-free peppermint candy but that is completely optional. The peppermint extract already adds peppermint flavor to the fudge.

Sugar-Free Dark Chocolate Chips: This recipe works best with chocolate that is sweetened with Stevia or erythritol. Chocolate that is sweetened with monkfruit will not set well. You can make it with chocolate with a monkfruit blend but the chocolate will need to be kept in the freezer so it doesn’t get too soft.

Sugar-Free Coconut Condensed Milk: Adding condensed milk to the chocolate is what gives this fudge its creamy smooth texture. I used sugar-free coconut condensed milk.

Peppermint Extract: I used peppermint extract to flavor the fudge. You can also use crushed sugar-free peppermint candies but they are a little harder to find and will add some texture to the fudge so I opted to use peppermint extract instead.

How to Make Keto Peppermint Fudge

  • The chocolate and condensed milk are first heated and mixed until melted and smooth. The peppermint extract is then stirred in.
  • Transfer the fudge to a parchment lined loaf pan and place into the freezer until set.

Expert Tips

  • Avoid using chocolate sweetened only with monkfruit (like ChocZero). The fudge will not set because it will be too soft. You can use a chocolate that is sweetened with a blend of monkfruit and another sweetener such as erythritol (like Lakanto) but the fudge will need to be kept in the freezer to keep it from getting too soft.
  • I recommend using dark chocolate and not milk chocolate chips. Milk chocolate doesn’t set as well and may taste too sweet for some people.

3 Ingredient Keto Peppermint Fudge

Creamy smooth peppermint fudge that is keto-friendly and low carb. This easy fudge is just 3 ingredients and is a festive fudge to make for the holidays.

Ingredients

  • 1 1/2 cups (256 g) sugar-free chocolate chips , see note before starting
  • 3 fl oz (89 ml) sugar-free coconut condensed milk
  • 1/4 tsp (1 ml) peppermint extract

Instructions
 

  • Line an 8 inch x 4 inch loaf pan with parchment paper leaving some overhang for easy removal later.
  • Add chocolate chips and condensed milk to a large microwave safe mixing bowl. Heat in 15-30 second intervals, stirring in between with a spatula until mixture is completely melted and smooth. You can also melt the chocolate mixture on the stove using the double boiler method. Stir in the peppermint extract until evenly mixed.
  • Transfer the mixture into your prepared loaf pan. Use your spatula to smooth and even the surface. If desired, you can garnish the surface with a crushed sugar-free peppermint candy.
  • Place fudge into the freezer until set (about 1-2 hours). Cut fudge into 1-inch pieces with a sharp knife.

Notes

  • This recipe works best with sugar-free chocolate chips sweetened with Stevia or erythritol. Avoid using chocolate sweetened only with monkfruit (like ChocZero). You can make it with a chocolate sweetened with a monkfruit erythritol blend (like Lakanto) and the fudge will be very creamy but will need to be kept in the freezer because it gets a little too soft if left out at room temperature.
  • Depending on the chocolate brand, there may be a little bit of crystallization of the chocolate after the fudge sets.
  • I made this fudge successfully with Lily's dark chocolate chips,* Whole Food's sugar-free dark chocolate chips* and Lakanto sugar-free chocolate chips* (but Lakanto version is softer and needs to be kept in the freezer).
