These coconut balls have a creamy center and are a cool and refreshing treat. You can make a large batch and store them in the fridge or freezer for whenever you need one.

Ingredients

  • Shredded coconut
  • Greek yogurt
  • Honey

Shredded coconut: This recipe works best with unsweetened finely shredded coconut. Finer shreds will bind together better and provide a smoother texture.

Greek Yogurt: I made this with whole milk plain Greek yogurt. I recommend using whole milk and not low fat or fat free yogurt, which are too watery and will prevent the balls from setting well. Make sure to also use a thick, high protein Greek yogurt.

Honey: A little honey is added to sweeten the coconut balls and help them bind.

How to Make No Bake Coconut Balls

  • The coconut, yogurt and honey are mixed together until a sticky, thick batter forms.
  • Use a 1 tablespoon cookie scoop to scoop the mixture. Coat each ball in more coconut and then gently roll into a smooth ball. Repeat with the remaining coconut mixture.
  • Place the balls into the fridge to set.

Texture

These coconut balls are soft and creamy. They remind me of a healthier coconut truffle or the filling for some chocolate coconut candy bars. They are very lightly sweetened.

Expert Tips

  • This recipe works best with finely shredded coconut. The smaller and thinner the shreds, the better they will bind.
  • You want to use a thick, high protein, whole milk Greek yogurt. I tested this with low fat Greek yogurt and the balls were a little too soft to handle.

3 Ingredient No Bake Healthier Coconut Balls

These healthier coconut balls are soft and creamy. They don't contain any refined sugar. They need just 3 ingredients and don't require any cooking or baking.

Ingredients

  • 3/4 cup (165g) whole milk plain Greek yogurt, see note before starting
  • 1 cup (70g) finely shredded unsweetened coconut, plus additional 1/4 cup (17g) for rolling
  • 2 tbsp (1 fl oz/30 ml) honey

Instructions
 

  • Line a small baking sheet with parchment paper.
  • Add yogurt, 1 cup coconut and honey to a large mixing bowl and mix until evenly combined. Your mixture should be thick. Place the mixture into the fridge for about 15-30 minutes to allow it to thicken slightly more as the coconut absorbs some of the moisture from the yogurt. Add remaining 1/4 cup of coconut to a small bowl and set aside.
  • Use a 1 tbsp cookie scoop to scoop the mixture. Release the ball and coat the ball in the small bowl of coconut. Then gently roll the ball between your palms to form a round ball. Place the ball onto your prepared baking sheet. Repeat with the remaining mixture. If you are finding your mixture is too wet or sticky to work with, you can add more coconut to the mixture.
  • Place balls into the fridge for about 1 hour to firm up further. The balls are then ready to eat. Store uneaten balls in the fridge or freezer in an airtight container.

Notes

  • You may need to add a little more coconut to the mixture to reach the right amount of thickness. The amount can vary depending on the coconut you are using and the amount of moisture in your yogurt. 
  • Yogurt note: Make sure to use a thick, whole milk Greek yogurt. I recommend using one that contains around 16 grams of protein per 3/4 cup (170g) serving.
