3 Ingredient Vanilla Cake (No Oven, Eggs or Butter)

This easy vanilla cake is great when you need a cake fast. It doesn’t need eggs, butter or an oven. The cake is ready in about 10 minutes, including cooking time. The cake comes out fluffy and soft.

Whether you’re low on ingredients, time or energy or just need a cake as soon as possible, this is a great cake to make. It’s so quick and easy and ready in about 10 minutes.

Ingredients

  • Oreo Golden Sandwich Cookies or Vanilla Sandwich Cremes
  • Baking Powder
  • Milk

This cake is a variation of my 2 Ingredient Chocolate Cake. I did have to make some changes to make it work with vanilla Oreos but I’m very happy with the result.

Vanilla Sandwich Cremes: Oreo Golden Sandwich Cookies is the most popular brand of vanilla sandwich cremes but other brands should work. I tested this cake with Oreos as well as Amazon’s Happy Belly brand and Whole Food’s 365 brand versions of vanilla sandwich creme cookies. If you’re looking for an easy vanilla cake that is made with flour instead of crushed cookies, try my 5 Ingredient Vanilla Cake instead.

Baking Powder: Unlike my chocolate version, you do need baking powder for this vanilla cake. The baking powder will help the cake rise and be fluffy and soft.

Milk: I used 1% low fat milk. Dairy-free milk alternatives like soy milk, almond milk and oat milk should also work.

How to Make No Oven Vanilla Cake

The Oreos are first crushed until fine crumbs. I used my Vitamix blender. You can also crush the cookies by hand or in a food processor. Then add in the baking powder and milk and mix until a smooth batter forms.

The batter is then poured into a silicone or other microwave-safe container and cooked in the microwave. I used a 6 inch silicone round cake pan.

No Oven Vanilla Cake Texture

This cake is soft and fluffy and has a texture like classic vanilla cake. Like many microwave cakes, I do think it tastes best the same day it is made as it tends to dry out a little faster than cakes baked in the oven.

Ingredients

  • 27 Oreo Golden Sandwich Cookies or other vanilla sandwich creme cookies
  • 2 tsp (9.5 g) aluminum free baking powder
  • 1 cup (237 ml) low fat milk

Instructions

  • Grease the interior of a 6 inch round silicone cake pan. Line the bottom with parchment paper. Other microwave-safe containers and bowls of similar size can also work.
  • Add Oreos to a blender. Blend Oreos until they are fine crumbs. (If your blender is not powerful enough to grind down dry ingredients, see notes section for more ways to prepare the batter.) Add in baking powder and milk. Mix until batter is smooth.
  • Pour batter into prepared pan. Place into microwave and cook at full power for about 6 minutes. I cooked mine in an 1100 watt microwave. Cooking time may need to be reduced or increased depending on your microwave wattage. When cake is finished, a toothpick inserted should come out clean and the cake should pull away from the sides of the pan. Let cake cool completely before removing from pan. If desired, frost with your favorite frosting before serving.

Notes

  • I used my Vitamix blender* to make this recipe. Many high powered blenders are able to grind just dry ingredients without any liquid. If your blender is not able to do that, you can first crush the Oreos and then add them into the blender. The Oreos can be crushed in a food processor or by hand (seal the cookies in a bag and use a heavy object to crush them).

  • I have tested this recipe with regular Golden Oreos, Happy Belly Vanilla Sandwich Cremes and 365 by Whole Foods Vanilla Sandwich Creme Cookies.
  • See post for potential ingredient substitutions.
  • I frosted my cake with buttercream frosting. You can also dust with powdered sugar or use a whipped cream frosting.
  • Optional Buttercream Frosting: For the frosting I used, you will need 1/4 cup unsalted butter (softened to room temperature), 1 cup powdered sugar, 1/2 tsp vanilla extract, and 1.5 tbsp of milk. Cream butter until light and fluffy. Gradually add in the sugar and continue beating until sugar is fully incorporated. Add in the vanilla and milk and beat again on high speed for about 3 minutes or until frosting increases in volume and becomes very light and silky. You can add more milk if needed to reach desired consistency.
