These creamy peanut butter truffles are healthier than traditional truffles. They need just 4 ingredients. The filling is rich and creamy and you can’t even tell it’s made with healthier ingredients. These truffles are easy to make and store well.
Creamy peanut butter filling in a truffle

I love the filling for these peanut butter truffles. It tastes so rich and creamy but it’s not made with a lot of sugar, heavy cream, or butter like regular truffles.

Ingredients

  • Peanut butter
  • Greek yogurt
  • Maple syrup
  • Dark chocolate

Peanut butter: Make sure to use natural peanut butter with no added oils. The filling will not set properly if you use regular peanut butter with added oils.

Greek yogurt: The peanut butter is mixed with nonfat plain Greek yogurt to create a thick, creamy filling. I do recommend using nonfat Greek yogurt and not whole milk or low fat Greek yogurt. Also make sure to use a thick Greek yogurt. Some brands have a thinner consistency that is more like regular yogurt which you want to avoid.

Maple syrup: A little maple syrup is added to sweeten the filling. Maple syrup also helps to thicken the filling. I do not recommend using honey in place of maple syrup.

Dark chocolate: The peanut butter filling is coated in melted dark chocolate.

How to Make Peanut Butter Truffles

  • The peanut butter, yogurt and maple syrup are mixed together until they form a thick dough-like batter.
  • The filling is then rolled into balls and placed into the freezer to firm up.Truffle filling in a bowl and then rolled into balls
  • While the balls are freezing, melt the chocolate until smooth.
  • Then dip the frozen balls in melted chocolate. You can also add chocolate drizzles for decoration.

Texture

The truffles have a firm chocolate shell followed by a very creamy, smooth filling. They are lightly sweet but not as sweet as regular chocolate truffles.

Expert Tips

  • This recipe uses natural peanut butter with no added oils. Regular peanut butter with added oils will not thicken and set properly.
  • Make sure to use nonfat Greek yogurt. The truffle filling is softer and more difficult to roll with whole milk Greek yogurt. The higher water content in nonfat Greek yogurt helps thicken the peanut butter.
  • If you prefer sweeter truffles, you can coat the peanut butter filling in milk or semisweet chocolate instead of dark chocolate.

4 Ingredient Healthier Peanut Butter Truffles

These healthier peanut butter truffles are so rich and creamy. They are made with just 4 ingredients. They’re easy to prepare, freezer-friendly, and perfect for a quick snack or a healthier dessert.

Ingredients

  • 6 tbsp (78 g) plain nonfat Greek yogurt, see note before starting
  • 1/2 cup (128 g) unsweetened natural peanut butter (no added oils)
  • 2 tbsp (1 fl oz/30 ml) maple syrup
  • 2 cups (340 g) dark chocolate chips

Instructions

  • In a medium bowl, stir together the Greek yogurt, peanut butter, and maple syrup until smooth and fully combined. The mixture should be like a thick paste.
  • Use a 1 tbsp cookie scoop to scoop out balls. Gently roll them into smooth balls. The mixture will be a little soft but you should be able to roll them into balls. Place them on a parchment paper-lined baking sheet or plate. Freeze for 30 to 60 minutes, or until frozen solid.
  • Place the chocolate in a microwave-safe bowl and microwave in 30-second intervals, stirring between each, until melted and smooth. (Alternatively, melt the chocolate in a heatproof bowl over simmering water on the stove.) If you prefer a thinner chocolate coating, you can add 1-2 tsp coconut oil to the melted chocolate.
  • Use your favorite dipping tool to dip the peanut butter balls in chocolate. Let the excess drip off, then place back on the parchment-lined tray. Try to wipe off any excess chocolate that puddles when you place them on parchment paper. If desired, you can add thin chocolate drizzles over the truffles.
  • Place the truffles into the fridge until chocolate is set and then the truffles are ready to serve. Store any uneaten truffles in an airtight container in the fridge or freezer.

Notes

  • Greek yogurt note: Use a brand of Greek yogurt that is thick. There are some brands that make a thinner style Greek yogurt that is more like regular yogurt and you want to avoid those. I like using Fage* or Kirkland brands. Also I recommend using nonfat plain Greek yogurt. Whole milk Greek yogurt will cause the filling to be more soft and harder to roll into balls.

  • Make sure to use unsweetened natural peanut butter with no added oils. If you need a substitute for peanut butter you can try natural almond butter.
  • You can use whatever type of dark chocolate you prefer for dipping. I use dark chocolate chips but you can also use dark chocolate candy melts or chopped dark chocolate bars.
  • Estimated nutrition assumes 1 cup 60% dark chocolate used because not all of the chocolate ends up on the truffles.
