I love how soft and flavorful this bread is. It only takes about 5 minutes to prepare and then it’s ready to be baked.

Ingredients

  • Oat flour
  • Baking Powder
  • Cottage Cheese
  • Eggs

Oat flour: Oat flour is used in place of wheat flour to create a very tender, soft bread.

Baking powder: Since this bread does not contain any yeast, it uses baking powder instead to help give it rise. Make sure to use aluminum free baking powder to prevent any potential metallic aftertaste.

Cottage cheese: Make sure to use 4% milkfat cottage cheese. Low fat cottage cheese is too watery and adds too much moisture to the bread. Also avoid any low protein cottage cheese. Your cottage cheese should have at least 13 grams of protein per 1/2 cup (113 grams) serving.

Eggs: This bread uses a combination of eggs and egg whites to give the bread its structure and light crumb. You can substitute liquid egg whites instead of fresh egg whites.

How to Make Healthy Oat Bread

  • The cottage cheese is first blended until smooth. The eggs and egg whites are added in and mixed until no egg streaks remain.
  • The cottage cheese mixture is then transferred to a large bowl with the oat flour and baking powder. Stir in the flour and baking powder with a spatula until evenly mixed and no pockets of oat flour remain.
  • Pour the mixture into your prepared baking pan and bake for about one hour or until the bread is done.

This bread is very soft and moist. The egg whites help keep the bread light and airy. It has a crumb that is similar to bread made with yeast and is not a cake-type of bread.

Expert Tips

  • Make sure to use 4% milkfat cottage cheese. Low-fat cottage cheese tends to be too watery. I also recommend avoiding low protein cottage cheese (less than 13 grams per 1/2 cup (113 g) serving) or any brand of cottage cheese that is watery. Using low fat, low protein or watery cottage cheese will cause the bread to have too much moisture.
  • Liquid egg whites can be used in place of the four large egg whites.
  • You need to stir in the oat flour. Don’t try to blend the oat flour with the wet ingredients. Adding the oat flour to the blender will overwork the mixture and affect the texture of the bread.

4 Ingredient Healthy Oat Bread

This healthy oat bread doesn't contain any yeast, wheat flour, added sugar, butter or oil. It is easy to make and the bread comes out very soft and moist.

Ingredients

  • 2 cups (440 g) cottage cheese, 4% milkfat, see note before starting
  • 2 large eggs + 4 large egg whites, the 4 large egg whites can be substituted with 3/4 cup liquid egg whites
  • 3 3/4 cups (400 g) oat flour
  • 1 tbsp (11 g) aluminum free baking powder

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease and line a 9 x 5 inch loaf pan with parchment paper.
  • Blend the cottage cheese, eggs and egg whites in a blender until smooth.
  • In a large mixing bowl, add oat flour and baking powder. Stir to combine.
  • Pour the cottage cheese mixture into the dry ingredients and stir with a spatula until everything is evenly mixed and you have a thick batter. Make sure there are no pockets of oat flour left unmixed in the batter.
  • Transfer the mixture to your prepared loaf pan and smooth the surface with a spatula. If desired you can sprinkle 1-2 tablespoons of rolled oats over the surface for garnish.
  • Bake bread for about 60-70 minutes, or until bread is golden brown and cooked. Baking time can vary a lot depending on your loaf pan, how much moisture is in your cottage cheese, etc. This is a very moist bread so if you aren't sure if the bread is done, it is better to bake it a little longer. When you press lightly on the bread surface, it should bounce back and not sink in.
  • Let the bread cool completely before slicing. Store any uneaten bread in an airtight container in the fridge or freezer.

Notes

  • Cottage cheese note: Cottage cheese adds a lot of moisture to this bread so it is important to use 4% milkfat cottage cheese and one that is not low protein. You want a cottage cheese with at least 13 grams of protein per 1/2 cup (113 g) serving. I found that low fat cottage cheese is too watery to work with this recipe. In addition, avoid any brands of cottage cheese that have low protein or are watery.
  • I tested this bread with Amazon Grocery cottage cheese 4%* and Whole Foods 365 Organic cottage cheese 4%.*
