These chocolate flavored cottage cheese donuts are soft and sweet. They are also low carb, low sugar, high protein and keto-friendly. The donuts need just 4 ingredients and don’t require any frying.

These donuts are soft and a little chewy. They are easy to make and you can customize the sweetness and chocolate level.

Ingredients

  • Cocoa powder
  • Cottage cheese
  • Almond flour
  • Sweetener

Cocoa powder: I recommend using Dutch process cocoa which gives the donuts a more rich cocoa flavor. Dutch process cocoa powder is not as bitter or acidic as natural cocoa powder.

Cottage cheese: I used 4% milkfat cottage cheese for these donuts. Make sure to use a high protein cottage cheese so the donut dough isn’t too moist.

Almond flour: Make sure to use superfine almond flour which has a much finer texture. Regular almond flour will be too gritty.

Sweetener: I used Lakanto monkfruit with erythritol to sweeten the donut batter. You can use other brands but I do recommend using monkfruit or erythritol. Avoid using allulose for this recipe. Allulose causes the donut dough to be too moist and also makes the donuts brown too quickly.

How to Make Chocolate Cottage Cheese Donuts

  • The cottage cheese is blended until smooth.
  • Add the cottage cheese to a large mixing bowl along with the remaining ingredients. Stir until you have a sticky dough that is uniform in color.
  • Use a 1.5 tablespoon cookie scoop to scoop the dough and roll each dough into a round ball between your palms. Place onto your prepared baking sheet.
  • Bake the donuts for about 20 minutes or until done.
  • If desired, you can add a chocolate glaze on the donuts before eating.

Expert Tips

  • I made the donut dough less sweet since I usually add a glaze on top. If you want to eat them plain, you can add a little more sweetener to the donut dough.
  • You can reduce or increase the cocoa powder for less or more cocoa flavor.

4 Ingredient Keto Chocolate Cottage Cheese Donuts

These chocolate donuts are soft and chewy. They are just 4 ingredients and are low carb, low sugar, high protein and keto-friendly.

Ingredients

  • 1/2 cup (110g) small curds high protein cottage cheese, 4%, see note before starting
  • 1 1/2 cups (140g) blanched superfine almond flour
  • 2 tbsp (12g) unsweetened Dutch process cocoa powder
  • 1/4 cup (48g) sugar-free sweetener, see note before starting

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  • Add cottage cheese to a blender. Blend until completely smooth and no cottage cheese chunks remain. I find it is easiest to blend cottage cheese in a high powered personal blender. It will also work with a large blender but you will need to stop your blender a few times and scrape down the sides with a spatula to help the cottage cheese blend.
  • Add the almond flour, cocoa powder and sweetener to a large mixing bowl. Whisk until evenly combined. Add the blended cottage cheese, making sure to scrape the sides and bottom of the blender to try to get all of the cottage cheese out of the blender. Use a spatula to mix until the ingredients are evenly combined and a thick dough forms. The dough shoud be uniform in color. If the cocoa is not evenly mixed in, you can knead the dough a few times until it is evenly mixed.
  • Use a 1.5 tablespoon cookie scoop to scoop dough. Roll each dough between your palms to form smooth balls. Place the donut holes on the prepared baking sheet, spacing them about 1 inch apart (they don’t spread much during baking).
  • Bake for about 20 minutes, or until the donut dough looks cooked. The dough should be a lighter brown color and there should be minor cracks in the donuts. Let donuts cool fully before eating. If desired, you can dip the donuts in glaze before serving. Store uneaten donuts in an airtight container in the fridge or freezer.

Notes

  • Cottage cheese note: This recipe works best with a high protein cottage cheese that contains 13 or 14 grams of protein per 1/2 cup (110g) serving. I tested with Good Culture brand* and Amazon Grocery brand.* Avoid brands like Knudsen which don't contain as much protein. I also have not tested with Daisy brand which is made without the usual thickeners that are in most cottage cheese brands so that may affect the donuts.
  • Sweetener note: I used Lakanto monkfruit with erythritol sweetener (Amazon | Target)* You can use a different brand, but try to use a monkfruit erythritol blend. Avoid using allulose or a sweetener blend with allulose because it will cause the donuts to be too moist and to brown too quickly.
  • Optional chocolate glaze:
    • 1/2 cup powdered sweetener (I used Lakanto powdered monkfruit with erythritol (Amazon | Target)*
    • 2 tbsp cocoa powder
    • 3 tbsp water
    • In a small bowl, whisk together powdered sweetener and cocoa powder. Whisk in water. Start with 2 tbsp and add more as needed until it reaches your desired consistency.
