I’ve made a lot of baked goods with bananas, like my Peanut Butter Banana Chocolate Chip Muffins, but I love this banana mug cake because it satisfies my craving for banana bread while also providing portion control. When it comes to banana bread, I can eat half of a freshly baked loaf in one sitting.

So for my next paleo mug cake recipe, I decided to tackle banana bread.

This mug cake is fluffy and light. Because bananas are naturally sweet, I only used a little bit of sweetener. I also added walnuts because banana bread just doesn’t taste the same to me without walnuts.

Banana Bread Mug Cake (Paleo)

A single serving banana cake that is also paleo and gluten free.

Ingredients

  • 4 tbsp mashed ripe banana, about 64 grams weighted; approximately 1 small banana
  • 2 tbsp coconut flour
  • 1/4 tsp baking powder , please note commercial baking powder is not paleo so you may need to make your own homemade paleo baking powder
  • 1/8 tsp cinnamon
  • 1 large egg
  • 1 tsp olive oil
  • 1 tsp maple syrup
  • 2 tbsp almond milk
  • 1 tbsp chopped walnuts

Instructions
 

  • In a microwave-safe mug, add all ingredients except walnuts. Whisk until batter is smooth. Stir in walnuts.
  • Cook in the microwave at full power for about 2 minutes or until cake is cooked. Allow cake to cool a few minutes before eating. The banana flavor will be more prominent if you allow the cake to cool for about 15-20 minutes.

Notes

  • This recipe works best with overripe bananas. Make sure to mash them as much as possible. Also keep in mind that 4 tbsp of mashed bananas is more than just 4 tbsp of bananas, so make sure to measure after the bananas have been mashed.
