2 Ingredient Almond Cookies (No Flour, Eggs, Refined Sugar or Oil)

These 2 ingredient almond cookies are easy to make and don’t contain any flour, eggs, refined sugar, or oil. They come out soft, buttery and sweet. They make a healthy snack when you’re craving something sweet.

This is a quick and easy cookie recipe that really hits the spot when I’m craving something sweet for a snack. The cookies are made up of ingredients you usually find in an energy bar but these are actually cookies.

Ingredients

  • Almond Butter
  • Dates

Almond Butter: Make sure to use natural unsweetened almond butter. The only thing listed on the ingredient label should be almonds. The cookies will not turn out right if you use regular almond butter (almond butter that is processed with additional oils). If you don’t have almond butter on hand, I’ve also made a peanut butter version.

Dates: This recipe uses Medjool dates which are a larger type of date. Medjool dates act as a natural sweetener and binder for the cookies. If you don’t have dates, I’ve also made a 2 Ingredient Almond Cookies recipe that uses maple syrup. The cookie texture will be a little different though.

Almond Butter Cookie Texture

These cookies are firm on the outside and soft when you bite in. They are more delicate than your typical cookie because they are made of so few ingredients. They have a melty, buttery taste to them.

These easy almond cookies make a healthy sweet snack. They are just 2 ingredients and don't contain any flour, eggs, refined sugar, or oil.

Ingredients

  • 3/4 cup (106 g) pitted Medjool dates
  • 1/2 cup (128 g) unsweetened natural almond butter

Instructions

  • Preheat oven to 350°F (177°C). Line a large cookie sheet with parchment paper or silicone baking mat.
  • Add dates to a food processor. If your dates are not super soft, see notes for how to rehydrate them before using. Pulse until dates form a smooth paste. You will need to scrape down the sides of your food processor a few times with a spatula to help your food processor mix the dates. Your date paste should also roll up into a ball when done.
  • Once dates are ready, add in almond butter. Pulse until almond butter is completely incorporated. You may need to scrape almond butter from the sides and bottom of the food processor to help mix all of the almond butter in. When you are done, it should form a thick cookie dough.
  • Using a 1.5 tbsp cookie scoop, scoop dough and place onto prepared cookie sheet, spacing the dough about 2 inches apart. Roll each dough ball between your hands to form a round ball. Place back onto cookie sheet. Press down on each dough ball with the palm of your hand so that it forms a thick round disk (about 1/2 inch thick). Smooth edges of cookies if needed. Cookies will not spread during baking so shape your cookies as needed.
  • Bake cookies about 10 minutes. Cookies should puff up slightly during baking and look dry on the surface when done.
  • Let cookies cool on sheet before removing. Cookies will be very delicate when they first come out of the oven, so wait until they are fully cooled before removing.

Notes

  • Dates need to be pitted before measuring them. If you are using already pitted dates, I recommend breaking them in half before adding them to the measuring cup for a more accurate measurement (this is not needed if you are using a scale).
  • If your dates are not soft and moist you may need to rehydrate them. To do so, soak them in warm water for about 15 minutes. Then pat dry and use.
  • Dates need to form a date paste for this recipe to work. This is best done in a food processor. If you don't own a food processor, I have a version using maple syrup instead of dates linked in the post.
  • Make sure to use natural almond butter and not almond butter processed with oils.

  3. i don’t have any food processor, can i please use just my blender to make the dates pasta paste receipts? 

    • Depending on the blender you have, it may not work as well. The dates are pretty sticky and it might be hard to get them fully blended.

    • You may get a little more texture with a blender.. i use a chopper/ blender for dates and they turn out pretty well.

    • Natural almond butter is just almonds and salt – if you have a high powdered blender you can blend your own. We don’t have an exact recipe, so let us know if you try it!
