3 Ingredient Healthy Bread Rolls (No White Flour, Eggs, Yeast, Butter or Oil)

These healthier bread rolls are so soft and moist. They are just 3 ingredients and don’t require any yeast, white flour, eggs, butter or oil. You can have fresh bread ready in about 30 minutes.

If you’re looking for a healthier bread to make, this recipe is for you. These bread rolls are super easy to make and made with more nutritious ingredients than traditional bread rolls.

Ingredients

  • Whole Wheat Flour
  • Baking Powder
  • Greek Yogurt

Whole Wheat Flour: Bread is often made with white flour. Instead of white flour, these bread rolls are made with whole wheat flour, which contains more nutrients than white flour. I made these with whole wheat pastry flour. Whole wheat pastry flour has less protein and produces softer and more tender baked goods. My family doesn’t usually like when I bake with whole wheat flour because of its texture, but whole wheat pastry flour makes the baked goods much softer. If you only have regular whole wheat flour, you can use that as well, your rolls just won’t be quite as soft. Looking for a substitute for wheat flour? Baking powder: Instead of yeast, this quick bread uses baking powder to help the bread rise.

Greek Yogurt: This recipe uses nonfat plain greek yogurt. Greek yogurt provides moisture and makes these rolls very soft without needing any butter or oil. Other greek yogurts may work (like low fat or whole milk), but the amount you need to add may be different and the texture of the bread rolls may not be the same. If you want to make these with regular yogurt, I have a recipe for bread made with regular yogurt.

How to Make Healthy Bread Rolls

The flour and baking powder are whisked together until evenly combined. The Greek yogurt is then added into the flour until a sticky dough forms. The dough is then divided into balls and then they are baked until golden.

Healthy Bread Roll Variations

These bread rolls taste like soft, slightly tangy bread. They are a little plain on their own. If you are eating them with a spread, then they should be just fine. But if you want to eat them plain, you can add some things to make them more flavorful on their own.

  • Sprinkle the surface with coarse salt before baking. While the bread rolls already contain sodium, this will add a little extra salt flavor to the bread.
  • Use a flavored nonfat Greek yogurt. Adding yogurt that has sugar added will cause the rolls to spread out more, but flavored yogurt will also add more flavor and some sweetness to the bread rolls.

Ingredients

  • 2 cups (239 g) whole wheat pastry flour
  • 1 tbsp (14.5 g) aluminum free baking powder
  • 1 3/4 cups (390 g) nonfat plain Greek yogurt

Instructions

  • Preheat oven to 350°F (177°C). Line a large baking sheet with parchment paper or a silicone baking mat.
  • Add flour and baking powder to a large mixing bowl. Whisk until evenly combined.
  • Add in 1 1/2 cups of yogurt. Do not add the full amount. Save the remaining 1/4 cup, which you may not need to use. Stir the yogurt into the flour. I found it easier to start with a spatula and then used my hand to knead the flour into the dough. You can also use a mixer with dough hook attachment if you don't want to use your hand. At first your mixture may appear too dry, but you should be able incorporate more flour the more you knead. If your dough can no longer absorb any more flour and you still have some flour left in your bowl, add in more of the remaining yogurt, only 1 tbsp at a time, until all the flour is worked into the dough. You want to stop adding in yogurt when the flour is all incorporated. You do not want the dough to be too wet because it will change the texture of the bread (see notes).
  • Divide the dough into 8 pieces. Roll one piece between your palms to form a smooth ball. Place onto prepared baking mat. Repeat with remaining dough pieces, spacing bread rolls 2 inches apart. I recommend washing your hands in between each ball to prevent the dough from sticking to your hands.
  • Bake bread for about 20-25 minutes or until bread rolls look cooked and tops are lightly golden brown.

Notes

  • I have only tested this with nonfat plain Greek yogurt. I have not tested with whole milk or low fat greek yogurt. 
  • Whole wheat pastry flour can be substituted with regular whole wheat flour though your rolls may not be quite as soft. See post for more details.
  • You need to be careful with how much yogurt you add to these rolls. Adding too much yogurt will yield a more sticky and wet dough but the breads will come out with a texture more like a soft biscuit rather than a soft bread roll. You want your dough to be on the drier side and you should stop kneading and stop adding more yogurt as soon as the flour is all incorporated.
  • Different yogurt brands will have different consistency of Greek yogurt. Try to choose a very thick Greek yogurt. I like using Kirkland brand, Fage or 365 Whole Foods Brand.
  • Because the amount of moisture varies depending on brand, the exact amount of yogurt you need to add can vary. Sometimes I only need 1 1/2 cups, sometimes I need 1-4 tbsp more.
  • These breads are soft and a little tangy. They do taste a little plain on their own but I think it's fine if you plan on eating them with spread or something else. If you want to add more flavor, I share some ideas for variations in the post.

  1. i added a little yeast and warm water to help make it a little fluffier, as well as season w italian seasoning when it came out of the oven. it so soo delicious and fluffy! doesnt taste dense/hard or chewy at all. thank you so much!!

  2. I made these with a little salt in the dough and also sprinkled salt on top. I used lactose free 2% Greek yogurt. Worked great! They took about 30 minutes to bake. My kids and husband loved them. 

  3. Tried the basic recipe and found it a little bland. Want to try adding some rosemary to the recipe but don’t know how much to add. Also wondering if “Everything bagel seasoning” would work mixed into the dough, or would it only work as a topping for each roll? Really like the texture of the pastry flour.

    • If you are using fresh herbs, one tablespoon should work. If you are using dried herbs, try one teaspoon. You can try mixing the everything bagel seasoning into the dough – we haven’t tried that, so let us know how you like it.

  4. This was great! I used Gold Medal Whole wheat, Plain Greek Yogurt and baking powder from Walmart.
    Protein total about 65 grams. Wasn’t consistent with the portions, so got 10 of different sizes.
    Taste – I expected a biscuit texture, but it really is more of a yeast roll feel. These were a bit tangy from the yogurt.

  6. At first, I thought these rolls were very plain, as stated in the recipe, and wasn’t quite sure what to think. However, the more I ate them, the more I liked them. I put butter on them and they are very good. They are very filling as well.

    I used 300 grams of Fage Non-Fat Yogurt and they came out perfect. I might add some more flavor by adding salt on my third batch. My boyfriend absolutely loves them!

    • Thanks for sharing! Yes the rolls are supposed to be a little plain on their own so that you can eat them with spread or use them as small sandwiches, etc.

  10. Just finished making these. First, they are definitely twangy. Substitute sour cream for a milder flavor. Second, they are screaming for salt! If salt is a dietary issue for you, then try some garlic powder. Third, since the instructions say to form into balls, that’s exactly what you’ll get. Try different shapes. Fourth, I brushed the tops with melted butter. I will definitely make these again but with the changes I listed above. Love a simple bread recipe!

  11. I want to use oat flour with the bread rolls. What are the measurements for using oat flour for this recipe? Will it be just as soft as the whole wheat pastry flour? What is another flour substitute that’s just as dense as whole wheat flour?

  14. Whole wheat pastry flour is made from white flour and I’m confused as to how it can be called whole wheat? It is white flour that is processed even further? Can anyone clear this up?

    • Both whole wheat flour and whole wheat pastry flour contain the whole wheat berry (bran, germ, and endosperm). White flour is flour that is only made with the endosperm so it is not as nutritious. Traditional whole wheat flour is milled from a red wheat and whole wheat pastry flour is milled from a softer white wheat. Whole wheat pastry flour is still very nutrition because it contains the whole grain. It is not made from white flour, which I think is where you are confused. It is made from a white wheat.

  15. I tried these with whole wheat flour. Didn’t see pastry flour until it was to late. They were a little too dense. Not sure what would happen if I used bread flour. Or a combination thereof. I may try again. Thought they were OK with butter
