These healthier no bake peanut butter cookies don’t require any baking or cooking. The cookies need just 3 ingredients and don’t contain any wheat flour, eggs, refined sugar, dairy or oil. The cookies also store well.

These peanut butter cookies make a great snack or dessert. They are soft, a little chewy and lightly sweet and salty.

Ingredients

  • Peanut butter
  • Almond flour
  • Maple syrup

Peanut butter: Make sure to use natural peanut butter with no added oils. The dough will not thicken enough if you use peanut butter with added oils. If you need a substitute for peanut butter, you can try sunflower seed butter or almond butter.

Almond flour: Superfine almond flour is used to help thicken the dough and give the cookies a cookie crumb texture. I don’t recommend substituting with coconut flour. Coconut flour makes the cookies more firm and crumbly. If you need a substitute for almond flour, I have a version made with quick oats.

Maple syrup: Maple syrup acts as a sweetener, binder and thickener. When maple syrup is mixed with peanut butter, it thicken the peanut butter to a dough-like texture.

How to Make No Bake Peanut Butter Cookies

  • The peanut butter, almond flour and maple syrup are mixed together until a thick dough forms.
  • Use a 1.5 tablespoon cookie scoop to scoop the dough and roll into balls. Place the balls onto your prepared baking sheet.
  • Press down on the balls to form thick disks. If desired, use a fork to make criss-cross indents on top of each cookie.
  • Place the cookies into the fridge to set.

Texture

The cookies are soft, slightly chewy, with little bit of a crumb to them from the almond flour. The cookies are lightly sweet.

Expert Tips

  • Make sure to use natural peanut butter with no added oils. Peanut butter with added oils will not thicken into a dough.
  • The cookies are meant to be lightly sweet. If you prefer sweeter cookies, you can add a little more syrup or sprinkle some sweetener on top.

3 Ingredient Healthier No Bake Peanut Butter Cookies

These no bake peanut butter cookies are soft, chewy and easy to make. No baking or cooking required. Just 3 ingredients and they don't contain any wheat flour, eggs, refined sugar, dairy or oil.

Ingredients

  • 1/2 cup (128g) unsweetened natural peanut butter with no added oils
  • 2 tbsp (1 fl oz/30ml) maple syrup
  • 1/2 cup (45g) superfine blanched almond flour

Instructions
 

  • Line a baking sheet with parchment paper.
  • Add all ingredients to a large bowl. Mix with a spatula until a thick dough forms. Once the mixture forms a dough, use your hands to knead the dough a few times to fully incorporate the almond flour. If your dough seems too soft, you can add a little more almond flour. Taste the dough and adjust sweetness if needed.
  • Use a 1.5 tbsp cookie scoop to scoop the dough. Roll the dough pieces into smooth balls. Place cookie dough balls onto your prepared baking sheet, spacing them about 1 inch apart, and press down on each ball so that they form thick round disks, about 1/2 inch thick. If desired, use the back of a fork to make a criss-cross pattern on top of each cookie.
  • Place the cookies into the fridge for about 1 hour (uncovered) to firm up further. The cookies won't change much but they should firm up enough so they are easy to hold. Store any uneaten cookies in an airtight container in the fridge or freezer.

Notes

  • Almond flour note: If you are using a measuring cup to measure the almond flour, make sure to use a spoon to loosen the almond flour in the bag and then spoon the almond flour into your measuring cup, leveling off the top with a knife.
