Love is in the air. Or so it seems for those around me. In the last week, two of my friends had a secret marriage ceremony, another one got engaged, and I received my invitation for a wedding for two other friends.

Strawberries are usually on sale in February, and it just so happens they are FH’s favorite fruit. Unfortunately, he also has an allergy so he isn’t supposed to eat many. But one or two is okay. So I made him these strawberry cake waffles.
Strawberry Cake Waffles
Instead of making regular waffles, I decided to make strawberry cake and bake it in the waffle maker. These came out pretty good. Sweet, light, crispy, with little bits of strawberries mixed inside. It works as a breakfast or a dessert.

I bought a heart-shaped waffle maker* quite a while ago and haven’t used it nearly as much as I thought I would. It does work pretty well though, signaling with a loud beeping sound when your waffles are finished cooking to the desired doneness.

These are easy to make and a unique presentation for cake, especially since guys don’t usually like cupcakes. You can make them in a regular waffle maker too and cut them to be heart shaped or leave them be.

Strawberry Cake Waffles

These cake waffles are sweet, light, crispy, with little bits of strawberries mixed inside. Make them for breakfast or dessert for a fun treat.

Ingredients

  • 1 1/2 cup cake flour
  • 1/2 tsp baking soda
  • pinch salt
  • 1/4 cup unsalted butter
  • 1/2 cup sugar
  • 1 egg
  • 1/3 cup sour cream
  • 1/4 cup fat free milk
  • 1/4 cup oil
  • 1/2 cup chopped strawberries

Instructions
 

  • In a small bowl mix flour, salt, and baking soda.
  • In the bowl of a stand mixer, cream butter and sugar until fluffy. Add egg, sour cream, oil until combined. Add flour mixture and mix until batter is smooth. Fold in strawberries.
  • Spray and preheat waffle iron. Pour some batter into your waffle iron and cook until waffle timer goes off. Waffles are done when they turn a golden brown. Repeat with remaining batter. Serve warm or cold with a side of fresh strawberries, and whipped cream.
