3 Ingredient No Bake Brownie Cookies (No Flour, Refined Sugar, Eggs, Dairy, Butter or Oil)
These no bake brownie cookies are fudgy and chewy. They don’t require any baking or cooking. They need just 3 ingredients and don’t contain any flour, refined sugar, eggs, dairy, butter or oil. The cookies also store well.

These brownie cookies taste like fudgy, chewy brownies in cookie form. You can easily customize them and adjust them to suit your personal preferences.
Ingredients
- Cocoa powder
- Dates
- Cashew or peanut butter
Cocoa powder: This recipe works best with Dutch process cocoa powder which has a richer cocoa flavor and is not as bitter as natural cocoa powder.
Dates: Use Medjool dates, which are a larger type date that has more soft flesh which is needed to form a smooth date paste.
Cashew or peanut butter: Make sure to use natural cashew or natural peanut butter with no added oils. The cashew/peanut butter helps the cookies bind and also removes some of the date flavor from the cookies. If you use cashew butter, your brownie cookies will have a light nutty flavor. If you use peanut butter, your brownie cookies will have a stronger peanut butter flavor.
How to Make No Bake Brownie Cookies
- The dates are blended in a food processor until they become a mostly smooth paste.
- The cashew butter and cocoa powder are mixed in until a thick dough forms. Taste and adjust as needed. If you prefer a stronger cocoa flavor, you can add a little more cocoa powder. If you prefer a nuttier flavor or less date flavor, you can add more cashew butter.
- Scoop the dough with a 1.5 tablespoon cookie scoop. Roll between palms and then flatten into a cookie shape. Place onto your prepared cookie sheet. Repeat with remaining cookie dough. Place into fridge to set.
- If desired, you can decorate the cookies by dipping them in melted chocolate or drizzling the surface with melted chocolate.
Expert Tips
- The recipe is very forgiving and you can add more cocoa powder for a richer, bittersweet chocolate flavor. You can also add more cashew or peanut butter for a stronger nut flavor.
- Make sure to use Medjool dates. Other date varieties don’t have as much soft flesh so the date paste won’t be as smooth.
- You can also add mix-ins like chopped nuts.

3 Ingredient No Bake Brownie Cookies
Ingredients
- 1.5 cups (222g) pitted Medjool dates, weight and measurement is after pitted
- 9 tbsp (45g) unsweetened Dutch process cocoa powder, or more as needed
- 2 tbsp (32g) natural cashew or natural peanut butter with no added oils, or more as needed
Instructions
- Line a baking sheet with parchment paper. Set aside.
- Add dates to a food processor and blend until a mostly smooth paste forms. A few small specks of date skin in the paste is okay but you want the paste to be mostly smooth. You will need to scrape the sides of your food processor a few times with a spatula to help the processor mix and blend. If your dates are a little old or dry, soak your dates first before using them to rehydrate them. See notes for more details. If your dates are soft and moist, you do not need to soak them.
- Once you have a smooth paste, add in cocoa powder and cashew/peanut butter. Blend until you have a uniform mixture with the consistency of a soft dough. Taste and adjust as needed. If you want a stronger nut flavor, add more nut butter. If you want a stronger cocoa flavor, add more cocoa. If your dough is too crumbly, add a splash of water. If it becomes too soft and sticky to work with, add more cocoa.
- Using a 1.5 tbsp cookie scoop, scoop cookie dough. Roll scooped dough between the palm of your hands until it forms a smooth ball. Place dough ball onto prepared cookie sheet. Press down on the dough ball with the palm of your hand until it forms a smooth round disk, between 3/8 and 1/2 inch thick. Repeat with the remaining dough. This will be the final shape of your cookie so smooth the edges and reshape as needed.
- Place cookies into fridge for about 30 minutes to one hour to firm up. The cookies will not change much but they will be firmer, making them easier to hold and eat. If desired, you can dip the cookies in melted chocolate or drizzle melted chocolate over the cookies for decoration. Store uneaten cookies in an airtight container in the fridge or freezer.
Notes
- Date note: If you are using an older package of dates or your dates seem dry, you will need to rehydrate the dates. To rehydrate them, soak them in warm water for 10-15 minutes. Then drain out the water and thoroughly pat dry the dates with paper towels. Then add dates to food processor to make the date paste.
- Weight and measurement for the dates is after they have been pitted. I used whole dates and removed the pits. I find that dates that have already been pitted are usually more firm and not as soft as whole dates with the pits. I used Joolies Medjool Dates*

Do the dates make them sweet enough
We think so! The dates are the main sweetener in these cookies.
I have not made these brownies. I have seen several of these recipes and they all seam to use dates. I don’t like dates! Is there something use instead? Like maybe sweet potatoes?Or maybe pumpkin?

I usually have almond butter on hand. Is there a reason to avoid almond butter?
It will work with almond butter as well, though almond butter will add a little more texture since it’s not usually as smooth.
How many dates did you have to manually pit to get 1.5 cups or 222 grams of dates?
The number of dates is going to vary because they are all not all the same size. You can buy them pitted from the store so you don’t have to do it but either way will work!
