These pistachio bars are soft, fudgy, and full of nutty pistachio flavor. The bars need just 3 ingredients and don’t require any wheat flour, refined sugar, dairy, butter or oil. The bars take only a few minutes to prepare and store well.

These pistachio bars are an easy dessert or snack to make. You can also easily customize them.

Ingredients

  • Pistachio flour
  • Honey
  • Egg whites

Pistachio flour: This recipe uses pistachio flour. You can use store-bought or homemade. Store-bought is definitely easier and saves time. Homemade pistachio flour is a little more difficult to make, but it will result in a much more green pistachio flour since store bought tends to be more yellow. However, to make homemade pistachio flour you will need peeled pistachios (either peeling them yourself or you can buy silvered pistachios which are already peeled) and a coffee grinder (a food processor doesn’t break down the nuts enough). If you use store bought pistachio flour, your pistachio bars will turn out more yellow but you can use some matcha powder or green food coloring to make the bars turn out more green.

Honey: Honey is used to sweeten the bars. Honey also pairs well with pistachio flavor.

Egg whites: Egg whites act as a binding agent, provide structure, and give the bars a very fudgy texture.

How to Make Pistachio Bars

  • The egg whites and honey are whisked together. The pistachio flour is then mixed in.
  • Transfer the mixture to your prepared loaf pan. Bake for about 25 minutes or until the bars are set on the surface.
  • Allow the bars to cool fully before cutting. You can also dust the bars with powdered sugar or powdered sweetener and chopped pistachios before serving.

  • You can double the recipe to make more bars.
  • Pistachio flour is usually available through online merchants.
  • If you want to make your own homemade pistachio flour, you will need a coffee grinder because a food processor does not pulse the pistachios fine enough. You will also need to peel the pistachios first or use silvered pistachios. Homemade pistachio flour will result in a brighter green flour.
  • If using store-bought flour, the flour is more yellow from oxidation. You can make the bars more green naturally by adding about 1 tsp of matcha powder (I recommend ceremonial grade for better green color) to the batter. You can also add a few drops of green food coloring.

3 Ingredient Pistachio Bars

These pistachio bars are soft, fudgy and full of pistachio flour. They only need 3 ingredients and don't require any wheat flour, refined sugar, dairy, butter or oil.

Ingredients

  • 5 tbsp (2.5 fl oz/74 ml) honey
  • 2 large egg whites
  • 1 1/2 cups (150g) pistachio flour, see note before starting

Instructions
 

  • Preheat the oven to 350°F (175°C). Line an 8 x 4 inch loaf pan with parchment paper, leaving some overhang for easy removal later.
  • In a medium bowl, whisk together the honey and the egg whites until smooth and fully combined.
  • Add the pistachio flour and fold with a spatula until the pistachio flour is fully and evenly incorporated. Transfer the batter to your prepared loaf pan.
  • Bake for about 20-25 minutes or until the surface is set and lightly browned around the edges. Allow the bars to cool fully in the pan before removing and cutting them with a sharp knife. If desired, you can dust the bars with powdered sugar and chopped pistachios before serving.
  • Store uneaten bars in an airtight container in the fridge or freezer.

Notes

  • Pistachio flour note: Homemade pistachio flour is more green than store bought so I like to use homemade pistachio flour but it is more difficult to make. First, you will need a coffee/spice grinder to grind the nuts into flour. In addition, you will need to peel the pistachios before using them or use silvered pistachios (which already are peeled). It is definitely easier to use store-bought pistachio flour but know the flour will be more yellow. When using store bought, I like The Pistachio Factory brand.* If using store-bought pistachio flour, I recommend adding about 1 tsp high quality matcha powder (ceremonial grade) or a few drops of food coloring to make the bars more green.
