With apples in season right now, I love making apple flavored recipes. These apple bread rolls are lightly sweetened and topped with fresh apple pieces.

Ingredients

  • Self-Rising Flour
  • Vanilla Yogurt
  • Apples

Self-Rising Flour: Self-rising flour is all purpose flour that is already premixed with baking powder and salt. If you don’t have self-rising flour on hand, you can just mix together all purpose flour, baking powder and salt to make your own self-rising flour. I have also made apple bread rolls using whole wheat flour.

Vanilla Yogurt: This recipe uses low fat vanilla yogurt. Make sure to use regular yogurt and not Greek yogurt. Vanilla yogurt will add a little sweetness to the rolls and make the rolls very soft.

Apples: I recommend using a sweet and crisp variety of apples like Honeycrisp, Ambrosia or Fuji. The apples add texture and apple flavor to the rolls. If you don’t want to take the extra step of cutting up fresh apple pieces you can also substitute half of the vanilla yogurt with unsweetened applesauce to add apple flavor to the bread rolls.

How to Make Apple Bread Rolls

The flour and yogurt are mixed together until a dough forms. The apple pieces are then stirred into the dough. Divide the dough into eleven pieces. Using slightly damp hands, roll the dough pieces into balls. Bake rolls for 25-30 minutes or until bread rolls are done.

Ingredients

  • 4 cups (500 g) self-rising flour see note regarding amount needed
  • 1 1/2 cups (374 g) lowfat vanilla yogurt
  • 1 cup (117 g) chopped apples peeled, cored and cut into 1/2 inch by 1/4 inch pieces

Instructions

  • Preheat oven to 350°F (177°C). Line a large baking sheet with parchment paper.
  • In a large bowl, add flour and yogurt. Stir with a spatula until the flour is fully incorporated into the yogurt and a dough forms. Add in the apples and gently stir them in until they are evenly distributed. The dough will be sticky. Divide the dough evenly into eleven pieces. Using slightly damp hands, roll a piece of dough until it forms a ball. Place onto prepared baking sheet. Repeat with remaining dough, spacing the balls at least 1.5 inches apart.
  • If desired, brush the surface of the dough balls with vegetable oil. While this is not required, it will give the bread rolls a more even golden brown finish. If you don't brush the bread rolls they will remain pale in some spots. Bake bread for about 25-30 minutes or until done. Bread rolls are best served soon after they are done baking. If eating leftovers, reheat in an oven or toaster oven.

Notes

  • This recipe was originally tested with White Lily's self-rising flour which has a lower protein content than some other brands of self-rising flour. Please check the protein content of your flour before starting. If your self-rising flour has 2 grams of protein per 1/4 cup, then you can use the amount stated in the recipe. If your self-rising flour has 3 grams of protein per 1/4 cup, then remove 8 tbsp of the flour from the amount in the recipe and replace with 8 tbsp of cornstarch.
  • Homemade self-rising flour: If your all purpose flour has 3 grams of protein per 1/4 cup, use the following measurements: Add 3 cups + 8 tbsp all purpose flour, 2 tbsp baking powder, 8 tbsp cornstarch and 1 tsp salt to a bowl. Whisk until evenly combined. If your all purpose flour has 2 grams of protein per 1/4 cup, use the following measurements: Add 4 cups all purpose flour, 2 tbsp baking powder, and 1 tsp salt to a bowl. Whisk until evenly combined.
  • To properly measure flour, spoon the flour into the measuring cup and then level off with a knife. Do not directly dip the measuring cup into the flour because this results in too much flour. Use this method of measuring whether you are measuring self-rising flour or measuring all purpose flour to make your own self-rising flour.

  • Use a sweet apple variety like Honeycrisp, Fuji or Ambrosia.
  • To add even more apple flavor to the bread dough, substitute half of the yogurt with unsweetened applesauce.
  • If you like cinnamon, you can add 1/2 tsp cinnamon to the dough.
  • Brushing the tops of the bread with vegetable oil is optional but will give the bread rolls a more golden surface. If you leave them as is, the bread will brown less evenly and will have some parts that remain very white. The bread rolls in the photos were brushed with oil before baking.
  • Don't brush the tops with butter because it will change the texture of the dough.
  • The bread rolls are very lightly sweetened. They are not meant to be dessert bread rolls.
