A while back Baby Bro and I were sitting on a plane on our way home and we were flipping through the Sky Mall catalog to pass the time. We spotted a Baker’s Edge Nonstick Edge Brownie Pan* that looked quite interesting. The corner and edge brownie pieces are always the most sought after pieces in my family. We all love the extra crispy, chewy hard edge that comes with the pieces that frame the baking pan. The Baker’s Edge pan attempts to solve the problem of fights for those edge pieces by providing you an entire batch of brownies that have edges.
We were excited to see the pan but thought it a bit pricey. Fast forward a few years, and after now purchasing quite a bit of bake ware, including most of the Nordic Ware bundt set, the $35 price doesn’t seem so steep anymore.
For Christmas, Baby Bro got me the Baker’s Edge pan (which I suspect was as much as a gift for him as it was for me). I finally got a chance to check it out this weekend. I also got a chance to check out Ghiradelli’s brownie mix. Normally I use Betty Crocker’s mix, but the Ghiradelli one stares me in the face every time I go to Costco. After reading a review ranking the different brownie mixes out there (which ranked Ghiradelli first), I decided to buy a box. One of these days I’m going to try out my own brownie recipe. I’ve been a bit put off doing it though because a lot of times the homemade brownies are too cakey for me. I like mine to be fudgy and chewy.

When Baby Bro and I set out to make the brownies, we weren’t sure how many bags of mix to use. The pan is about 9 x 12, but then it’s missing some portions in between. The Ghiradelli instructions didn’t seem to help either. For an 9 x 13 pan, it suggested using two bags of mixes, but it also said this would create extra thick brownies. So we ended going with two bags. I thought it ended being too thick. I love brownies, but these were super sweet, and the added thickness was a bit too much for me. Next time I’ll stick using just one bag of mix. I will say that the thick brownies do look more appetizing though.
The brownies came out great in this new pan. Each piece has the hard, chewy edge. The brownie pan comes with a spatula to cut and remove the brownie pieces that is custom fit to the pan size. The brownies were really easy to remove and the pan is easy to clean.
As for the Ghiradelli mix, I enjoyed the mix except for the addition of the chocolate chips, which I thought made the brownies too sweet. I noticed on their website that they have several different kinds and the one I had was triple chocolate. Next time I’ll probably try one without chocolate chips.

I think to prevent arguments in our household, I will invest in this brownie pan. Preventative measure after all. And I agree that all the investments I’ve put into my kitchenware that $35 is cheap.
I’ve done some research on the pans and the Baker’s Edge one is the only one I’ve found with really good reviews. $35 does seem a bit steep, but I’m justifying all my pan purchases as “investments.” Hehee. For instance, the nordic ones are super easy to use and they last forever. Hopefully this one will last me a long time too.

OMG Kirbie. I about fainted when i saw this post. My sis wanted to buy this for me awhile back b/c I’m the total brownie edge/top crust lover! But I told her that i thought $35 was too much money. I wonder if there’s a cheaper version somewhere?
I think i’ve tried the Ghiradelli mix awhile back. Not sure I can really tell the difference b/w their mix vs another mix though. Didn’t they sell that mix at Costco?
