St. Patrick’s Day is just a few days away so I wanted to share another St. Patty’s themed recipe.

I posted a Guinness Chocolate Mug Cake last year made in adorable mini beer glasses, but I’ve since tweaked the recipe, and I wanted to share this new and improved version. It’s got a simpler list of ingredients, it’s eggless, and it has a better texture too.

I love the pairing of chocolate and stout beer. The stout brings out the bitter notes in the chocolate, giving it a coffee-like flavor.

Guinness Stout Chocolate Mug Cake

Since I was working with Guinness beer, I decided to cook the cake it in a giant beer mug. I ended up doubling the recipe to fill the mug, though it didn’t quite reach the surface. Of course the problem of doubling the recipe is that I ended up eating the whole thing… Damn my lack of self-control when it comes to chocolate.

The chocolate cake isn’t too sweet because I really wanted the stout flavor to come through. You can add a little more sugar if you want something sweeter.

Guinness Stout Chocolate Mug Cake

This easy mug cake takes just minutes to make in the microwave!

Ingredients

  • 3 tbsp all purpose flour
  • 1/4 tsp baking powder
  • 1 tbsp white granulated sugar, if you desire a sweeter cake, you may want to add another 1 tsp
  • 2 1/2 tbsp fat free milk
  • 1/2 tbsp vegetable oil
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp Guinness stout beer

Instructions
 

  • Combine all ingredients into an oversized microwave-safe mug. Mix with a small whisk until batter is smooth. Cook in microwave for about 1 minute. Let cake cool a few minutes before eating.
