Happy Friday Duncan Hines Giveaway

Happy happy Friday! I’m super excited it’s Friday, are you? It’s December and time for another giveaway! This time there will be four winners. Four!

Recently, I was given an opportunity through Foodbuzz to give away Duncan Hines coupons for free products. I was given 2 coupons for free Duncan Hines products (up to a $3.99 value for each one), and then given 8 more to give to my readers. So I’m going to pick four lucky readers, each who will receive two coupons for free Duncan Hines products.

Even though I bake from scratch quite frequently, I like to keep a few boxes of cake mix on hand at all times in case of an emergency-no-time-to-bake-from-scratch type of scenario. I also like to keep them on hand to make cake mix cookies! I adore cake mix cookies. They have a homemade feel but without much work. What’s so  great about Duncan Hines is that they carry red velvet cake mix, which I haven’t found with the other big cake mix brand companies.

I’ve made all sorts of cake mix cookies, but in December, I love making some festive red velvet cake mix cookies. The cookies pictured are ones I made last year. I plan on making them again soon. The cookies have a crispy exterior and fudgy interior. Yum.

To enter the giveaway, simply leave a comment at the end of this post, telling me your favorite flavor for cake mix cake or another unique way to use cake mix. Please note, this giveaway is only open to US residents. I will use random.org to generate 4 random numbers. Deadline to enter is Friday December 9, 2011 at midnight PST. If you are curious as to the winners of the past giveaways, I updated the previous giveaway posts with the winners so far here and here. Good luck!

Red Velvet Cookies

Servings: 2 dozen cookies
Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Course: Dessert
Cuisine: American
I love to use cake mix to make cookies because it's so easy! These red velvet cookies are crispy on the edges and chewy in the middle.

Ingredients

  • 1 box Duncan Hines red velvet cake mix
  • 2 eggs
  • Halfway between 1/3 and 1/2 cup of oil
  • 1 cup chocolate chips

Instructions

  • Prep baking sheets with parchment paper and preheat oven to 350°F. In a large bowl, mix the eggs, cake mix and oil. Once the batter is thoroughly combined, stir in the chocolate chips.
  • Drop by large tablespoons onto baking sheets. I usually roll the dough between my hands to have a smoother, round shape, which helps make more evenly shaped cookies.
  • Bake for approximately 10-15 minutes. Cookies are finished when you can slide them, without the bottoms sticking to the baking sheet. (Baking time may vary. When I made cake mix cookies before, sometimes I needed to only bake them for about 8-10 minutes. But I had to almost double it for these cookies before they were done.)

  1. I love any flavor of cake mix. I use then to make cheesecakes out of, so any flavor is GREAT!

  2. funfetti because it is so much fun to look at

  3. Dark chocolate fudge!!! Sooo yummy. I make layer cakes with dark chocolate fudge, french vanilla, and devils food. extra thick chocolate pudding as the filler and mocha or chocolate butter cream for frosting. If your using a box cake mix Duncan Hines is the ONLY brand!!

  4. Red velvet is definitely awesome but I think plain yellow is my favorite. But I had everyone salivating when I made red velvet whoopie pies with the cake mix.

  5. I love lemon, chocolate or red velvet!

  6. lemon-flavored cake, citruses are so fun!

  7. I actually love the regular yellow cake mix- it’s a great base for other add-ins like chocolate chips, nuts, Nutella, pumpkin, etc.!

  8. I think I tried cookies from a cake mix once, but since I can’t remember how they turned out, maybe it didn’t! I would pick chocolate cake.

  9. Funfetti, hands down.
