I was browsing through the ice cream aisle at the grocery store when I came up with the inspiration for this mug cake. I love the java chip ice cream flavor by Starbucks and thought it would be fun to recreate it as an easy mug cake.
A sweet coffee cake base, sprinkled with mini bittersweet chocolate chips. I topped it with some heavy whipped cream and additional chips to resemble the ice cream.
I was really happy with how this mug cake came out. The cake had a strong coffee flavor but was also very sweet. The whipped cream looked like soft serve ice cream.

Java Chip Mug Cake
- 5 tbsp all purpose flour
- 5 tbsp granulated sugar
- 1/8 tsp baking powder
- 1/2 tsp espresso powder
- 1 egg
- 3 tbsp milk
- 3 tbsp oil
- 2 tbsp mini bittersweet chocolate chips
- 1 cup heavy cream
- 1/4 cup sugar
- Mix everything except chocolate chips into an oversized mug until batter is smooth. Sprinkle chocolate chips on top of batter. Cook in the microwave for about 1 minute 40 seconds. Outside of batter may appear wet but the inside should be cooked. Let cake cool a little before frosting.
- While cake is cooling, whip the heavy cream and sugar on high speed until peaks form. Put into piping bag and pipe onto cake. Sprinkle with additional mini chocolate chips.
