I’ve been getting lots of suggestions for more mug cakes to try making. I love all the ideas and hopefully, I’ll be able to make them all eventually.
One suggestion I got was to create a Kahlua Mug Cake. So here it is.
You can taste the coffee, though most of the liquor taste evaporated when cooking. Next time I might add some espresso to the cake to make the coffee taste even more apparent.
It took me a few attempts to get this cake right. I forgot how sweet Kahlua was and my first version was way too sweet and I couldn’t taste the Kahlua at all. I did some more “research” tonight and I like this version the best. You can taste the coffee, a tiny hint of alcohol, and the cake is nice and fluffy too. I could barely wait for this cake to cool before digging in.
Here are the rest of my mug cake creations:

Kahlua Mug Cake
Ingredients
- 5 1/2 tbsp all-purpose flour
- 2 1/2 tbsp sugar
- 1/4 tsp baking powder
- 1 egg
- 3 tbsp Kahlua
- 3 tbsp oil
Instructions
- Combine all ingredients into an oversized mug. Stir with a small whisk or fork until batter is smooth.
- Microwave for 1 1/2 minutes. The surface of the cake may look a little wet, but as long as the middle of the cake is cooked then you should be okay. If cake is not done, microwave for an additional 30 seconds, but be careful not to overcook or else the cake will become rubbery. Mine was done at 1 1/2 minutes. Serve while warm.

This was awesome and easy to make. Thanks for the recipe. I wonder what other liquors would be good in the same recipe. I bet Grand Marnier, Brandy and probably any of the schnapps would be great. Since it’s vanilla it would work nicely with any of them. OH! What about triple sec or Frangelico?
these all sound like great ideas!
I just made 3 of these, one for my husband, my kiddo (Subbed a coffee) and myself. They were REALLY good and hit the spot. (We are going on vacation for a week tomorrow and we wanted something sweet that wouldn’t mess up the kitchen. Heh)
My son even HELPED me make them.
For those of you that wanted some chocolate in there? We through in a handfull of semi-sweet chocolate chips and it was GREAT! The barely melted chips acted like icing when the cake was still warm. Mmmm.
Thanks for coming up with this! We’ll definitely be making others!
So glad you liked it! And adding chocolate chips is a great idea too. I’ll have to try that next time or add some cocoa powder for a chocolate version. I’m glad to know your son was able to help you make it.
I remember a post on your site about beer bread a little while ago. Perhaps you could omit the baking powder and just use 3 tablespoons of Guinness?

These are the cupcake recipe I previously used and loved. Will probably play around with this
There’s a Guinness Chocolate cake recipe in Tish Boyle’s Cake Book. I’d love to try it once I get my hands on some Guinness (once I turn 21 >_<) Oh, and my boyfriend loved the Kahlua mug cake!
I’m so glad to hear your boyfriend loved the kahlua mug cake! I made Guinness cupcakes before and I loved them. I’m just trying to figure out if I can make it work with the microwave.
Oops, I misspelled Guinness the first time. Sorry…
I love Guinness chocolate cake. It’s on m to do list to create a Mug cake version
Wow, Kirbie, my boyfriend will go nuts for this! Thank you for putting up this recipe! [He also went nuts over the Bailey’s mug cake. He loves Baby Guinesses. Also, regular Guinness :)]
i used to make these dark chocolate brownies and add a splash of kahlua. i like the taste of coffee and chocolate together.
Ooh. Think it might be fun to add kahlua to the brownie mug cake
this would also be awesome as a chocolate mug cake with kahlua…
Hmm I’ve never mixed chocolate with kahlua before. Only milk! I will have to try it out and see what it tastes like. Sounds good though since I like coffee and chocolate
