Keto Avocado Brownies

A low carb, keto-friendly avocado brownie recipe. These easy brownies have a rich chocolate flavor and fudgy texture from the use of avocados.

Last week I shared a gluten-free fudgy avocado brownie recipe. It’s been so great seeing the pictures shared with me from people who’ve already made the recipe. I also received several questions regarding whether the recipe could be adapted for a keto diet. I’ve actually already created a keto brownies recipe I love, but I wanted to create a keto avocado one too. So after a few trials, here is my recipe for keto avocado brownies.

Sugar Substitute

The biggest challenge was finding a good sugar substitute for these brownies. These brownies are made with Sukrin Gold brown sugar alternative.* I was really impressed at how similar this is to the real thing. It looks and feels like brown sugar.

The brown sugar alternative adds sweetness to the brownies, as well as helps to keep them moist and fudgy.

I don’t recommend using a granular sugar substitute for these brownies as it does not melt as well.

Avocado Tips

Make sure to use a ripe avocado. You can tell when an avocado is ripe when you can lightly press on it and it gives a bit but doesn’t feel mushy. If your avocado is firm and doesn’t give at all when you press on it, it’s not ready. I prefer using Hass avocados because they are very creamy and buttery.

The best way to puree the avocado is with a food processor (you can also try a powerful blender if you don’t own a food processor). You don’t want any small bits of avocado in your batter so mixing by hand is not ideal. The avocado is added with the wet ingredients into the food processor to make it easier to puree into a smooth batter.

Chopped Chocolate

The brownie batter includes two types of chocolate: cocoa powder and chopped chocolate. The chopped chocolate enhances the chocolate flavor and adds additional sweetness to the brownies. If you like your desserts less sweet, use dark chocolate with 80% or higher cacao.

If you prefer something sweeter, choose a chocolate with less cacao, but make sure the chocolate is sugar-free. Lily’s is my favorite sugar-free chocolate right now. Lily’s creamy milk chocolate* is a good option if you want something sweeter.

These avocado brownies are super fudgy and easy to make. They are also keto-friendly and low carb!

Ingredients

  • 150 gram avocado flesh approximately 1 large avocado peeled and seed removed
  • 2 large eggs room temperature
  • 3 1/2 tbsp unsalted butter room temperature
  • 1/2 cup + 2 tbsp sukrin gold brown sugar alternative
  • 1/2 cup + 2 tbsp unsweetened cocoa powder dutch process preferred
  • 1/2 cup superfine almond flour
  • 1/2 tsp baking powder
  • 6 tbsp chopped dark chocolate or sugar free milk chocolate

Instructions

  • Preheat oven to 350°F. Grease the interior of a nonstick 8 x 8 inch baking pan with cooking oil spray and line the bottom with parchment paper. 
  • Add avocado, eggs, butter, brown sugar alternative to food processor. Pulse until batter is smooth and no avocado chunks remain.
  • In a medium bowl, combine cocoa powder, almond flour, baking powder. Whisk until evenly combined, breaking up any clumps of cocoa powder or almond flour as you whisk.
  • Pour dry ingredients into avocado batter. Pulse on low speed until the batter is smooth and uniform. You will need to scrape the batter from the sides and bottom of the food processor a few times, to help make sure the avocado is fully blended into the chocolate. Make sure avocado is fully blended into chocolate, otherwise you will taste the avocado in the brownies.
  • Stir in 4 tbsp of the chopped chocolate.
  • Spread batter into prepared baking pan. Batter will be very thick (like a mousse consistency) so you will need to use a spatula to spread it evenly across the baking pan.
  • Sprinkle remaining chocolate over surface.
  • Bake for about 17-20 minutes or until brownies are done. When you touch the surface of the brownies gently with your finger, it should bounce back. Allow brownies to cool for few minutes before cutting.

Notes

  • Because avocados vary so much in size, it's best to weigh out the flesh on a scale.
  • I used sukrin gold brown sugar alternative.* You can substitute with other brown sugar alternatives. I do not recommend using granular sugar substitute for this recipe.
  • You can use either natural or dutch process cocoa powder. I prefer dutch process because it has a smoother, less bitter taste.
  • I used Bob's Red Mill superfine almond flour.*
  • If you like your desserts less sweet, use an 80% or higher cacao dark chocolate.
  • If you prefer something sweeter, choose a chocolate with less cacao, but make sure the chocolate is sugar-free. Lily's is my favorite sugar-free chocolate right now. Lily's creamy milk chocolate* would be a good option if you want something sweeter.

  8. I am using coconut oil instead of butter. Is it okay to melt the coconut oil, or does that affect the texture? 

  9. When I made the cream got very good but when I bake it the avocado tastes bitter. Any suggestion?

  14. Just made these tonight … I wasn’t sure I would like them because I am used to low card/ diet treats  not tasting all that great….BUT these brownies are AMAZING !!! Thank you for this recipe !! Even my boyfriend loved them and he doesn’t do anything low carb ! He had 2 and so did I before I put them in the fridge lol Will definitely be making these again !!!
