One Minute Brownie Mug Cake

photo of a spoonful of brownie cake
Yes, that’s right. I created a brownie mug cake that takes only one minute to make in the microwave. I have to confess, I’m pretty thrilled. This is my favorite mug cake creation yet. And it is still super easy to make.

It’s super chocolatey like a brownie should be. This is more like the cake-type brownies rather than the chewy brownies, but it’s still so good. When it first came out of the oven, the brownie was quite fluffy, like a really good chocolate cake. After a minute or so, the batter turns denser, much more like a brownie because of the minimal amount of flour.

I made two, offered one to the FH. At first he refused. He’s gotten kind of sick of my mug cake creations. I insisted he take a bite and he didn’t regret it. He loved it and kept the brownie for himself.

Because brownies are denser, these don’t rise nearly as much and you don’t need an oversized mug unless you want to double the quantity. A regular mug will do.

There’s one extra step required to create these cakes, but it’s still super easy and clean up is still minimal.

  • 2 oz semisweet chocolate chips or chopped chocolate
  • 2 tbsp unsalted butter
  • 1 egg
  • 4 tbsp sugar
  • 2 tbsp flour

  • Select two microwave-safe mugs. In each mug place one tbsp of butter and 1 oz of semisweet chocolate. Microwave each mug for 40 seconds (microwave them separately). Remove and stir until chocolate is completely melted with a small fork.
  • Add 2 tbsp sugar to each mug and stir. Beat egg in a small bowl, add half to each mug and mix. Add in 1 tbsp flour to each cup and mix until smooth.
  • Cook each brownie for 1 minute in the microwave (do each separately). Serve while warm.

  1. I’ve just come across this recipe as was looking for something to satisfy a craving as didnt have anything sweet in – all I can say is wow! Tasted sooo good! Thank you for a great recipe & satisfying my craving ?

  2. Am confused do we mix the butter Nd chocolate or not explain d 2mugs

    • The butter and chocolate are melted first in the microwave. Once you mix the batter in each mug, microwave them one at a time to cook the cakes.

  3. Im sorry i had better, its super dry…

  4. This is my favourite mug dessert! I first tried it months ago and would make it constantly but then I lost the recipe. I’m so glad I kept searching for it and found it again!

  5. It worked! it tasted amazingly but i would reccomend to eat it as soon as you can, or it hardens and gets dry, i love this recipe! will definetely use it again

  6. This worked out amazingly! I was a little hesitant to use a raw egg, but unlike what I thought, it didn’t make it spongy at all! Why didn’t I find this before? Def sharing this with my friends and family! Please continue making and sharing these amazing recipes!

    Xoxo, Scarlet

  7. best thing cake thingamabob ever! i reccomend . I LOVE IT SO MUCH

  9. I made this with gluten free self raising flour and it still tasted delicious!
    Thank you 🙂

  10. Very tasty I made this I had all the ingredients and it gave an obnoxious amount of flavor but this was still sooooooooo good

  11. OMG!!!!!Never using Coca powder in mug cakes again .It was so delicious!!!This was my first time making anything from this website and I already LOVE it!!!! ??

  12. I love this recipe! It’s so easy and I’ve made it so many times. I clean while it’s microwaving then I eat it! It’s absolutely delicious, it is hard to clean the mug after but totally worth it.

  13. This was the best chocolate mug brownie I’ve ever made!!!

  14. loved this recipe!! delicious, easy and overall just simply amazing! 100 % would recomend.

  15. Definitely the best mug brownie I’ve made! Is it possible to make this without self-raising flour? That’s what I’ve been using.

  16. Hi! I’m not sure what I’m doing wrong, I made the recipe, I put everything in 1 mug (a bigger one) and then put it in the microwave for 2 mins. It came out really wet and sticky. Do I leave it in for longer? Bacause last time I did that, it came out all rubbery. 🙁

    • This recipe is designed for 2 individual cakes. You should divide the batter into two mugs as stated in the instructions and cook each separately. Adding them all into one will make the batter too dense when it is fully cooked.

  17. Soooooo good!

  18. Oh Yeah Baby! Delicious!

  19. It is good love it only thing can you make it like less sugar

  20. Literally all the perfect quality of a brownie done in less than a quarter of the time it would take to make brownies from the box. Plus, i’m not stuck with a whole batch justin waiting to be eaten day by day. Soft, chewy, and chocolatey.. so yummy. i wish i came across your website when i was pregnant because your recipes would’ve been my go-tos!!!

  21. This recipe is sooooo awesome.
I made the brownie and it tastes so good.
    I love it.
Thank you for such a wonderful recipe

  22. loved this recipe! made it at home in only 5 minutes! the texture was a little spongy, but i think that was only because i added too much egg to my mug. other than that, tasty and easy!
                                                            xoxo, Sophia

  23. Sitting here with a sweet tooth, searching for something with minimal ingredients and happened upon this. I’ve never made a mug cake, or brownie. Such a pleasant surprise, this was! Near the bottom, it’s just like a lava cake. Thanks Kirbie 🙂

  24. Lovely basic recipe it supresses my midnight snack craving. I added .5 oz more chocolate than the recipe but I figured it would be harmless. I’m not sure if I didn’t cook it long enough or it was the extra chocolate but I think next time I’ll add a little more flour and maybe some vanilla.

  25. Can I use brown sugar and mix it with the white?

    • I recommend making the recipe as is and then you can try diff versions and see how it compares. brown sugar will change the texture of the brownie.

  26. Seeing as I made this at 2 am, with nobody to share it with (Bummer…NOT!), I used a bowl for the double serving ( took 2min instead of 1 no biggie) and having no semisweet chocolate (not a fan of semisweet chocolate) I used a regular milk chocolate bar i had, kept everything else the same and it turned out AMAZING!!!

  27. This webpage IS SO OVERLOADED WITH ADS it is difficult for my computer and I have a top notch laptop…urrr…. However, this recipe was the best I have found so far!! LOVE IT~

    • what web browser are you using? i dont have a top notch laptop and i dont have issues with it loading any slower than other blog sites.

  28. This was perfect! So yummy and convenient!

  29. I made one jumbo brownie in a large mug and it is way too deadly. Someone save me! This is amazing!

  30. Thank you, thank you, thank you!! I’ve been searching for microwave mug cake recipes that don’t taste rubbery or just plain bad. This one was awesome! The texture and taste were absolutely perfect! This has just become my go to recipe for late night cravings!

  31. I absolutely adore this recipe.  I have a serious cinnamon addiction, though, so I substituted half of the chocolate for cinnamon morsels.  The result was glorious, especially after I added more on top of the hot brownie.

  32. How many tsp of chocolate (aprox.) is 2 oz?

    • Not sure..also I don’t think you’re going to get a very accurate measurement using tsp with chocolate chips, especially with their irregular shape, which is why I always weigh it out

  33. I mean for a single serving

  34. Being more of a chocolate fiend than sweets, I make this with 70% dark chocolate, 1.5 Tbsp sugar, and add splash of vanilla and salt and it comes out and it comes out dangerously good and easy.

  35. I make this cake WAY too often! The hubby wanted something sweet after he got home late from work…this always does the trick! What a great recipe!!!

  36. I just tried making this with gluten free all-purpose flour and vanilla and all I have to say is…FABULOUS! It was so good I almost forgot I was gluten free! Thank you!!!!

  37. Your recipe is fabulous!! My brownie mug cake is like a one that made by the oven!!

I have made brownie by using the microwave many times, but the texture is not good.

Thanks do much for your recipe.

PS. I have planned to make brownie cheesecake, I will use your recipe for brownie-base, hope it work ^^

  38. I tried this, and it came out a little strangely; there were bits of cooked egg weirdly strewn throughout. I think I may have added the egg before the sugar on accident; could this be the cause? Thanks!

  39. it taste better if you add 1 teaspoon or 2 wben it finish and mix it up. YUMMMMMMMMMM!!!!!!!!!!!!!!!!!!!!!!!

  40. it taste so good

  41. Oh my, I was Googling recipes looking for a quick remedy to my chocolate craving – something smaller in portion than a whole batch of brownies – and am thoroughly delighted to find this. Thank you!

  42. OMG!!!! I only had dark chocolate chips but it still ROCKED! You are so awesome.

  43. Did this today but with a twist! Instead of using semi-sweet chocolates, I used cinnamon chips and it was amazing. Especially when it’s topped with whipped cream and sprinkled cinnamon. Thanks for the recipe!

  44. I just want you to know you’re awesome. This is amazing. Eating it now!

  45. hey! it looks and sounds soooo good and easy, but there`s one problem – i have no microwawe.. ;( so mby you know in what temp and how long i should bake this? thanks 🙂

  46. Any idea how many calories is in this?

  47. I just made this using dark chocolate chips and I added pecans. It was so darn yummy! Thanks so much for sharing the recipe!

  48. Tried this with ghiradelli chocolate chips, so good!! Though for me, I think next time oi I’ll reduce sugar cuz I like my warm brownies with a scoop of vanilla bean ice cream 😀 so good!! Chocolate craving satisfied!!!

  49. OMG this was amazing, I tried it for the first time and my mom absolutely loved it, garnished it with Bounty and MnMs 😀 thank you so much for the recipe, i discovered your blog yesterday, love it!

  50. I put everything in one oversized mug and microwaved for a minute and a half… It was semi cooked but still awesome!! Thanks a lot! 😀

  51. Great base recipe! I was craving cream cheese swirl brownies, and I only wanted to make one serving, so what I did was melted a little more than a tbsp of chocolate chips with 1 tbsp butter, then added 1 1/2 tbsp sugar and half of the egg, then added 1 1/2 tbsp flour. I also added just a splash of vanilla extract and a dash of salt. With the other half of the egg, I added 1 oz cream cheese and 1/2 tbsp of sugar, mixed that well then swirled it in with the brownie mix. Microwaved for 2 min. INCREDIBLE! Thank you for the inspiration 🙂

  52. DELICIOUS! Worked perfectly, and just in the nick of time — we were craving a sweet treat, and I had nothing prepared! Disaster averted, and a new favorite late night treat found!

  53. This is my third Kirbie mug cake in the last week or so lol. I stumbled across your blog and am so happy I did – every recipe turns out great and absolutely perfect for a sweets craving. Also, I also live in SD, too! So thanks a bunch, neighbor! 🙂

  54. Instead of using butter, I used vegetable oil instead, and they turned out just as great! I’m going to try the Brownie Nutella Lava Cakes next!

  55. I know I am late to the game but I have to say these are amazing. I haven’t found one of your mug cakes that I haven’t liked but I think this is the best of the bunch. I think I will go so far as to say it’s better than regular brownies.

  56. So Ive been searching your blog and I think I may just of fallen in love, what your doing is everything I want to do. It’s so creative and new and it’s really just the best. I just thought I would let you know that your blog is amazing, keep up the good work!

  57. Is it possible to substitute the egg for something else? I was telling a friend of mine the amazingness of this recipe, but due to religious believes, she doesn’t eat eggs. So is there any way to make this with out the egg or replace it with something else?

    • I honestly don’t know the answer to that. I’ve never made brownies or cakes without eggs before. There may be a way, but I haven’t tried it.

    • Try a flax egg.
Also if you like chewy brownies try brown sugar.  It was great!

  58. Thought it was awesome! Me and my husband loved it! Why even comment if you didn’t like it? People are so weird. Just don’t make it. Duh!

  59. I tried with cocoa powder instead of chocolate chips. I should have added more liquid to compensate for the extra dry ingredients. It came out a bit dry and cakey (still edible for sure though). As a stroke of genius though, I put in a werther’s original and the area surrounding it was something special!

  60. Sorry not very good…..

  61. I’m so excited to try this, but I don’t think I have any chocolate chips or bars in my house. Do you think I’d be able to usse unsweetened cocoa powder instead?

  62. I tried to make just one serving and i used a whole egg for one cup. it came out kind of blobby but kind of cakey after i put it in the microwave for another 3o secs. I also added a little more flour because i thought it would help with the egg. Maybe i’ll stick to the recipe next time.

    • I think a whole egg is a little too much for this recipe and you have to double everything. Perhaps you try putting it all into one oversized mug if you dont want to divide the egg

  63. I tried it and it’s so good the only problem was I didn’t have any semi sweet chocolate so I used dark, and so it’s not that sweet but next time I will try it with the right kind

  64. I did what u said and for what ever reason it didn’t come out cake like .. it was just a blob .. what did I do wrong?!

    • I’m sorry to hear that. Without watching what you did, it’s hard for me to say. What do you mean by a blob? Did it cook thoroughly? Is it hard? I’m wondering if it is something with the microwave time. I’ve made this many times with no problems.

    • This is a delicious brownie and the recipe is so easy it is fantastic! My cousin that is 12 made it for her family. It takes about 4 minutes in tota to finish the whole thing with cooking. It was yummy and chocolatey. I loved it especially with ice cream!! One thing id recommend is putting some coffee powder (decaf for kids) and that might help Bc it can be too sweet sometimes
But overall I was really impressed

    • I tried to make it in a lower-powered microwave and I had to triple the cook time. If your microwave is below the standard wattage (which is common in dorms and other small communal spaces) you may need to zap it a bit longer. Try giving it a break halfway through to make sure it doesn’t burn.

  65. Canine Cologne mentioned that you had another version so I had to come check it out. Next time I want just a single serving of brownie, I’m so making this!

  66. OMG… this looks so good! I have been looking for a good mug brownie recipe and this looks great. Thank you!

  67. Yum this look delicious and so easy!
