Pandan Yogurt Cakes

After my success with pandan cupcakes, I found a recipe for pandan yogurt cakes on Little Corner of Mine.  The recipe is even simpler to make than the pandan cupcakes I made, and a lot healthier since it uses yogurt and less oil and sugar.

The pandan yogurt cakes called for less pandan extract.  As a result, the outside of the cakes turned brown, though the inside were still a bright green.  A similar thing happens when I don’t use enough matcha powder.  Next time, I’ll add some more pandan extract to these so that the outside doesn’t turn brown.

The cakes came out really moist and light.  They tasted as good as the pandan cupcakes, and a bit more moist too.  And since these are healthier, I think I’ll use this recipe for pandan cakes from now on.

Pandan Yogurt Cakes

Servings: 12 mini cakes

These little cakes are made with Pandan which gives them a bright green color inside. Plus, they’re a little on the healthy side since they’re made with yogurt and not a lot of oil or sugar.

Ingredients

  • 1 1/2 cup all purpose flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup plain yogurt
  • 1 cup sugar
  • 3 large eggs beaten
  • 2 1/2 tsp Pandan extract original recipe called for 1/2 tsp, but I don't think it's enough
  • 1/2 cup canola oil

Instructions

  • Preheat oven to 350'F. Place cupcake liners in a muffin pan.
  • In a bowl, sift flour and baking powder. Add in salt & sugar. Stir to mix. Add in beaten eggs, yogurt, Pandan extract and oil. Stir until incorporated. Lastly, scoop the batter into each cupcake liner until 3/4 full.
  • Bake for 35 minutes or until toothpick inserted in center comes out clean. Cool on wire rack.

  1. Hi, is it possible to use homemade pandan leaf extract by extracting the juice from the leaf in this recipe? Thanks!

  2. I just made a cake, but why the color is not green? 

    • did you use a pandan extract that has food coloring added? Most of the ones sold here have green food coloring added to the extract so that is why the cakes are green

      • Do you mean the extract is clear, no any color? Mine is like water with a bit sediment.

      • the pandan extract I use is like a small bottle of food coloring. it’s liquid but thicker than water and a bright green. That is why the cakes are green. I think most of the time when you see pandan baked goods that have that bright green color, they are usually using an extract with green food coloring added to it. Unfortunately I don’t have a picture right now to show you but if you are looking for that green color you can add some green food coloring or look for extract that already has the green added to it.

      • I bought that one in a small bottle, but it’s not thicker. It’s like water. After I skated the bottle, the color showed a bit bright green, but after I baked the cake, the color of the cake is still like normal sponge color. Maybe I bought a wrong one. 
        Next time, I will go to different shop.

      • I wish I had a picture of the bottle I used but I currently don’t have any in my house. Sorry! But I would recommend you look for a different one. The one I used was more of a thick liquid and a very pigmented green color.
