S’more mug cake is an easy 5-minute dessert for one with a sweet graham cracker cake, melted chocolate, and toasted marshmallows. It only takes a few minutes to make and cooks in one minute in the microwave.
I was desperate for a mug cake after work this evening. And I wanted to do something I hadn’t done before. So, I surveyed the ingredients in my kitchen and came up with the idea of a S’more mug cake.
The cake base is a fluffy graham cracker-flavored cake with melted molten chocolate in the center. I topped it with a toasted marshmallow. You can directly melt a marshmallow on top in the microwave and let it get all gooey over your cake, too, but I really wanted that toasted look, which reminds me of roasted S’mores in front of the fire.
Ingredients
- All-purpose flour
- Crushed graham crackers
- Baking powder
- Vegetable oil
- Milk
- Granulated sugar
- Milk chocolate
- Large marshmallow
Milk: I use fat-free milk, but you can use your favorite milk, including dairy-free milk.
Chocolate: Small chocolate squares work great because they melt really well. You can use milk chocolate, semi-sweet, or dark chocolate.
Marshmallows: As I mentioned, I like to toast a marshmallow, but you can melt it on top of the cake in the microwave.
Recipe Notes
This was pretty tasty, though I would have liked some more graham cracker flavor. Next time, I might add a graham cracker crust at the bottom.
Also, I think I might need to top the surface with more marshmallows so that the melted marshmallows really mix with the cake. Maybe throw on a bunch of mini marshmallows.
I’ll fiddle with this some more, but this was a pretty tasty first try.

S'more Mug Cake
Ingredients
- 4 tbsp all purpose flour
- 2 tbsp finely crushed graham crackers
- 1/4 tsp baking powder
- 1 tbsp vegetable oil
- 3 tbsp fat free milk
- 2 tbsp granulated sugar
- 2-3 small squares of milk chocolate
- 1 large marshmallow
- optional: 6-7 mini marshmallows
Instructions
- Combine flour, graham cracker crumbs, baking powder, oil, milk and sugar in a large microwave safe mug. Mix with a small whisk until no flour chunks remain. Make a hole in the middle of the batter and stick in the chocolate squares. Cook in microwave for about 1 minute. Top of cake should look done and surface of cake should be dry rather than gooey.
- Either add mini marshmallows or one large marshmallow and place on top of cake and heat for about 20 seconds until marshmallows are puffy. Or you can also take large marshmallow and toast in toaster oven for a few seconds until surface is light brown. I think the best result would be to use mini marshmallows and melt on cake in microwave and then add a toasted large marshmallow for garnish.

I try not to make my desserts overly sweet. glad it worked out!
I tweaked a bit.. I didn’t have mini marshmallows so I just tore regular marshmallows into smaller pieces, added that to the cake mix with chocolate chips. I also added a tablespoon of brown sugar to the mix and extra graham cracker crumbs. Mine kind of turned into a delicious melted smore-ish sludge. Maybe it sounds gross but it was delicious with a glass of cool milk. Will make again. ????????

I added salt & a cookie/butter base. Put one marshmallow inside & one on top. Chocolatechips on top. Really like this:)

Wow! This is so amazing! The first time I tried, I measured wrong and it turned out really clumpy and rubbery. The second time, it came out perfect! 2% milk worked just fine for me, I don’t really think it matters what type of milk you use. I recommend melting mini marshmallows on the top- it adds just the right amount of sweetness!

I used more Graham Crackers, and I left them chunky. Added a few mini marshmallows in the batter and on top before cooking. I made the mistake of using powdered fat free milk and no matter how I use it, it tastes gross to me. Thanks for the idea to make a smores cake!
